Each student will flip and form their own crepes as part of this class.  This is a perfect time to enjoy a morning brunch served with mimosas or Bellini’s as well as a full buffet of freshly made foods alongside the class.  Students will learn to make\, form and\, yes\, flip crepes in the air! In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli.  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  The class will include tastings and snacks during the day as well as an beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $85.00 per person includes instruction\, all supplies\, all materials\, and take home fresh ravioli with a quart of sauce to take home for each student enough to feed 2/3.  Bread with oil will also be served during this class. Couples start out the evening in an interactive appetizer where each couple creates a tasty Tomato\, Basil\, Burrata Bruschetta.  A complete charcuterie board of assorted cured meats and aged cheeses is served alongside it.  We provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer as the instructor leads you through the proper preparation. Then the class moves on to a hands on portion learning to make fresh pasta from scratch using flour\, oil and egg.  Students will learn to make the fresh dough and then we show you how to roll it out\, shape it and cut it into different pasta shapes.  We will then cook each individual pasta for you dine on as your dinner.  A choice from two different sauces will be available to top the pasta. An apron is encouraged for this class as each student will be making their own pasta using a substantial amount of  flour. This class will cover the classic favorite Italian Dessert known as Tiramisu where each student will create a full dessert that serves 8/12 people to take home and enjoy later.  Tiramisu uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu\, layers of expresso dipped cookies and rich chocolate shavings for a perfect dessert that requires no baking. In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies for layering as well as how to create the espresso syrup for soaking the cookies. *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. Prepared dishes will be taken home to chill over night before serving.  Recipe will serve 8/12 when completed.  $65.00 per person\, includes chef lead class instructions\, all ingredients\, tools and equipment as well as printed recipes for each student to take home.  A tasting of Tiramisu will also be included in the class.

DESCRIPTION:SATURDAY\, April 11th 2026 – All About Pie – Full Day Workshop – 10am to 2:00pm  –  10 Students Max.   \nHands On Class – Intermediate Level Cooking class – Kids 12 and up welcome – *Baking Pan included  – Vegetarian Friendly – Includes a light lunch during class.  \nJoin us on a fun Saturday and spend the day with Chef Michelle learning all about Pie.  This is a perfect class right to join and make some sweet treats.  In this class students learn to make a fresh pie dough using butter from scratch which will be used to make a full sweet Pie of choice.  The chef guides students through making the dough; forming it to filling it to designs for the top\, and then baking it in class.  Learn decorating techniques such as lattice work and other options for decor.  Each student will be working with their own dough to create a full pie to take home. Various toppings and ingredients will be provided for students to choose from such as fruit jams\, fruit compotes and other fillings of choice. During class the instructor will prepare a pie alongside the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the pies.  Each student will be making a fresh pie from start to finish in this class. The class will include a light lunch with coffee or beverage as part of the class.  Each student will go home with a fully cooked Pie.  Baking Time is included in the class. *A glass 9 inch pie pan will be provided for each student to use and take home as a gift at the end of the class. $150.00 Per person\, includes all ingredients and supplies for class; Chef led class instructions & recipes included. Our original recipe Ricotta cheesecake has a light and fluffy texture and is the key to its success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan owner and chef\, Michelle Gioviti.  In this hands on class students will make an individual cheesecake to take home which serves 8 to 12 people.  Assorted flavors will be available for each student to choose a favorite combination to make for their individual cheesecake. The chef will prepare a cheesecake in class as part of the teaching instruction. STUDENTS \nHANDS ON CLASS & CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – COUPLES COOKING – DATE NIGHT CLASS  \nJoin us for this fun Friday night date night cooking class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include a demonstration on how to  make a fresh Tomato Marinara Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs.  The meatballs will then be baked in class and a Meatball Sub Making Bar will be set up for each couple to make a meatball sub out of their meatballs\, including fresh bread\, shredded mozzarella cheese & Parmesan cheese.  Students will then dine on the subs as their dinner for the evening.  At the end of class students will go home with some meatballs and a small container of sauce to share or freeze for a later date.  An apron is encouraged for this class as each student will be making their own meatballs. This is an hands on Cooking Class\, an apron is recommended.  Gluten Free Available – While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and meatballs are easily adjusted to accommodate for Gluten Free but still maintaining a flavorful dish.   $85.00 per person. Please bring a Cookie Sheet/Baking Sheet to class to transport warm rolls home.  We will learn the ways to form dough\, make a wet sponge from yeast and shape\, stuff & form the rolls with assorted fillings. We will start with a demonstration for making one of Italy’s favorite appetizers – Tomato Basil Bruschetta. We provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer as the instructor leads you through the proper preparation. The chef will also demonstrate our recipe for a classic hearty meat sauce\, Italian Bolognese Sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into different pasta shapes.  Students may also choose to flavor their pasta if desired. STUDENTS  \nHANDS-ON – BEGINNING/INTERMEDIATE/ADVANCED LEVELS WILL BE TAUGHT  – SKILLS CLASS – CHEF INSTRUCTED \nContinuing on our Master Chef series of classes\, we will introduce sauces. Work a day with Chef/Owner Michelle Gioviti-Reeves learning a few of the foundational sauces in Italian cuisine and how they are used as well as pairing them with pasta.  Fresh pasta will also be taught in this class as well as three different sauces to pair with it.  Students will learn and apply kitchen basics and cooking techniques. This class will be limited in spots so that one on one training and teaching can be offered to every student.  We will demonstrate techniques and cooking skills for you to execute on your own and have a question-and-answer period during lunch. Instructions on making Ravioli follows and then each student’s fresh ravioli is cooked and topped with a choice of freshly made sauces for their evening meal.  There will be at least two different types of sauces to top the pasta for students to choose from and the class instructor will be going over sauce preparation during the class. An apron is encouraged for this class as each student will be making their own meatballs.  $85.00 per person. We provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer as the instructor leads you through the proper preparation. The chef will also demonstrate our recipe for a classic hearty meat sauce\, Italian Bolognese Sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into different pasta shapes.  Students may also choose to flavor their pasta if desired. Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making tarts from start to finish in this class. DESCRIPTION:SATURDAY\, November 22nd\, 2025 – All About Pie Workshop – 10am to 2:00pm  –  10 Students Max.   \nHands On Class – Intermediate Level Cooking class – Kids 12 and up welcome – *Baking Pan included  – Vegetarian Friendly – Includes a light lunch during class.  \nJoin us on a fun Saturday and spend the day with Chef Michelle learning all about Pie.  This is a perfect class right before the Thanksgiving Holiday to join and make some sweet treats.  In this class students learn to make a fresh pie dough using butter from scratch which will be used to make a full sweet Pie of choice.  The chef guides students through making the dough; forming it to filling it to designs for the top\, and then baking it in class.  Learn decorating techniques such as lattice work and other options for decor.  Each student will be working with their own dough to create a full pie to take home. Various toppings and ingredients will be provided for students to choose from such as fruit jams\, fruit compotes and other fillings of choice. During class the instructor will prepare a pie alongside the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the pies.  Each student will be making a fresh pie from start to finish in this class. The class will include a light lunch with coffee or beverage as part of the class.  Each student will go home with a fully cooked Pie.  Baking Time is included in the class. *A glass 9 inch pie pan will be provided for each student to use and take home as a gift at the end of the class. $150.00 Per person\, includes all ingredients and supplies for class; Chef led class instructions & recipes included. STUDENTS \nHANDS ON CLASS & CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – TAKE HOME MEAL – KID FRIENDLY \nJoin us for this fun evening class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include instructions how making a fresh Tomato Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs. Students will also be given a authentic Italian cannoli shell to fill with our decadent house-made Cannoli filling\, then dipped in dark chocolate chips. At the end of class students will go home with meatballs and a container of tomato sauce to share or freeze for a later date.  This is an hands on Cooking Class\, an apron is recommended.  While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and this can be a great alternative meal for guests. An apron is encouraged for this class as each student will be making their own meatballs.  $95.00 per person. DESCRIPTION:WEDNESDAY\, November 19th\, 2025 – BEGINNING BREAD: FOCACCIA BREAD/ART – 11am to 2pm – 14 STUDENTS MAX \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD \nIn this morning class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.  Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). This is a perfect class for beginners and an easy recipe for most anyone to work. This class will cover the classic favorite Italian Dessert known as Tiramisu where each student will create a full dessert that serves 8-12 people to take home and enjoy later.  Tiramisu uses layers of sweetened cream including mascarpone (an Italian type of whipped cream specifically for Tiramisu)\, layers of espresso dipped cookies & rich chocolate shavings for a perfect dessert that requires no baking. In this class all the ingredients for creating and layering an individual Tiramisu will be provided\, as well as instruction on what makes the best types of cookies for layering and how to create the espresso syrup for soaking the cookies. \n*Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. STUDENTS \nHANDS ON CLASS & CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – KIDS WELCOME – Includes a lunch of Meatball Subs  \nJoin us for this afternoon cooking class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include a demonstration on how to  make a fresh Tomato Marinara Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs.  The meatballs will then be baked in class and a Meatball Sub Making Bar will be set up for each couple to make a meatball sub out of their meatballs\, including fresh bread\, shredded mozzarella cheese & Parmesan cheese.  Students will then dine on the subs as their dinner for the evening.  At the end of class students will go home with some meatballs and a small container of sauce to share or freeze for a later date.  An apron is encouraged for this class as each student will be making their own meatballs. This is an hands on Cooking Class\, an apron is recommended.  Gluten Free Available – While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and meatballs are easily adjusted to accommodate for Gluten Free but still maintaining a flavorful dish.   $85.00 per person. STUDENT SIGN UP.  \n*Hands On Class – Kids Welcome – Take home and Bake (** Must bring an 8 or 9 inch spring form pan and a sheet pan to take cheesecake home) – Aprons Recommended \nDo you love making desserts?  Learn to create our signature light and fluffy Ricotta style cheesecake.  This class is for those students that love to bake but might find cheesecakes frustrating.  Our original recipe Ricotta cheesecake has a light and fluffy texture and is the key to its success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan owner and chef\, Michelle Gioviti.  In this hands on class students will make an individual cheesecake to take home which serves 8 to 12 people.  Assorted flavors will be available for each student to choose a favorite combination to make for their individual cheesecake.  The chef will prepare a cheesecake in class as part of the teaching instruction. A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome.  *Individual baking will be done at home. *Students need to bring an 8 or 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however. $75.00 per person\, includes all ingredients to prepare an a 9/10 inch cheesecake\, flavorings\, fillings and toppings for assorted varieties of cheesecake as well as printed recipes for each student to take home. DESCRIPTION:SATURDAY\, August 2nd 2025 – Baking Class: Brioche & Jams Workshop (*Includes Lunch)  – 10AM TO 2 PM – 10 STUDENTS MAX \nHANDS ON CLASS – VEGETARIAN FRIENDLY – TAKE HOME BREAD – KID FRIENDLY – INCLUDES LUNCH \nIn this cooking workshop enjoy a full day with Chef Michelle working with sweet\, savory Brioche Breads.  The recipe shared is an original recipe that the Fat Tuscan developed to make both savory rolls and sweet dessert breads using a fresh Brioche Dough.  The class will also include making two types of jams using fresh fruit.  Each student will learn to make a savory brioche bun & Sweet brioche bun. Please bring a Cookie Sheet/Baking Sheet to class to transport warm rolls home.  We will learn the ways to form dough\, make a wet sponge from yeast and shape\, stuff & form the rolls with assorted fillings. Printed recipes will be given to each student and a discussion on techniques and instructions for the dough and forming the dough will be given.  This class is a hands-on class where each student will be handling and making their own bread dough from scratch.  Aprons are recommended.  Lunch using the breads from class will be available to all students with a salad and beverage of choice.  Students will be going home with a least a dozen fresh rolls and fresh jam from class to eat and or share at a later date.  $150.00 per person includes all supplies\, class instruction\, light snacks\, tastings and recipes to take home. \nWork a day with Chef/Owner Michelle Gioviti-Reeves learning the basics for making Brioche Breads.  Students will learn and apply kitchen basics and cooking techniques. Each student will be making a full batch of the biscotti dough and baking is included in the class. Students may also choose to split their biscotti dough to make two different flavored cookies. Each student will mix and measure their own batch of dough and have options for various toppings and ingredients to flavor the biscotti.  During class Chef Michelle will prepare a sample biscotti dough with a discussion and instruction demonstration for forming and cutting the baked biscotti’s.  At the end of class warm baked samples of biscotti will be offered along with light snacks and refreshments during class. DESCRIPTION:Guest Chef Series\nGuest Pastry Chef Gislaine Rodrigues\, Celebrity Cake Designer from Brazil\nWednesday\, July 23rd 2025 – Beginning Confections\, Brigadiero\, The Brazilian Truffle – 11am to 1pm  – \n12 Students Max.  \nHands on & Demonstration  – Beginning Confectionary Cooking Class – Decorating & Chocolate Work  – Kid Friendly\n\nJoin us for a fun morning with Guest Chef\, Gislaine Rodrigues\, a Celebrity Cake Designer and pastry chef.  Gislaine is a Brazilian pastry chef and content creator specializing in sweets and desserts.  She will be in Gainesville for only a few days in July to teach us this workshop on Brigadeiro\, which she says is the most famous dessert in Brazil. The Brigadeiro\, also known as the Brazilian Truffle\, is a rich and creamy iconic Brazilian confection traditionally made for festive events. STUDENTS \nHANDS ON CLASS – KIDS WELCOME – VEGETARIAN FRIENDLY – MEAL PREP \nIn this afternoon class\, enjoy learning how to make pasta sauces and fresh ravioli from scratch. In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli.  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  The class will include tastings and snacks during the day as well as an beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $85.00 per person includes instruction\, all supplies\, all materials\, and take home fresh ravioli with a quart of sauce to take home for each student enough to feed 2/3.  Bread with oil will also be served during this class. Types of cookies; S’mores Chocolate Chip Cookie\, Buttery Shortbread\, White Chocolate Macadamia Nut Cookie\, Lemon Ricotta Coconut Cookies\, and Nutella Bombs. While cookies are baking students will enjoy a full beverage bar set up to make coffee and/or hot chocolate as well as an assortment of teas\, perfect to go with a warm cookie or two when they come out of the oven. Make one kind of cookie\, but go home with four to five different types. Recipes for all cookies will be included in the handout. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making tarts from start to finish in this class.
