STUDENTS – Perfect for date night.  \nHands On Class – Kids Welcome – Date Night – Dinner & Appetizer Cooking Class – Vegetarian can be Accommodated \nCome out and enjoy a fun Friday night learning to make fresh pasta from scratch with your choice of sauce. We will start with a demonstration for making one of Italy’s favorite appetizers – Tomato Basil Bruschetta. We provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer as the instructor leads you through the proper preparation. The chef will also demonstrate our recipe for a classic hearty meat sauce\, Italian Bolognese Sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into different pasta shapes.  Students may also choose to flavor their pasta if desired. We will then cook each individual pasta for you to eat and dine on the fresh pasta you made in class.  Two sauces will be available both a meat sauce and a vegetarian marinara sauce.  An apron is encouraged for this class as each student will be making their own pasta using a substantial amount of  flour.   Students will then dine on their finished results at the end of class with a choice of the prepared sauces as well the appetizer of bruschetta which started the class\, so come prepared to eat.  $85.00 per person includes all ingredients\, printed recipes\, appetizer and dinner of fresh made pasta with a choice of fresh sauce made in class.  *Wine is available to purchase by the glass or by the bottle from our wine retail area.

Our Theme for the menu is ‘Under the Tuscan Sun’\, and we will pair classic Tuscan dishes with wines all from the Tuscany region of Italy.  During class a discussion on preparation is conducted throughout each course as well as details about the paired wines.  This is a great event for a fun friends get-together or date night to beat the summer blues eating great food and drinking even better wines. Students will learn the art of creating authentic corn Arepas & sweet Cachapas. Come enjoy a night full of tasty treats cooking with us while you learn about the wonderful street foods of South America. In the class students will learn how to combine ingredients and the proper cooking technique for the perfect crispy texture to these amazing treats.  Students will learn to grill their own Arepas and staff will provide a full toppings bar of fresh ingredients typically used in South America for these wonderful hot treats. In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli.  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  The class will include tastings and snacks during the day as well as an beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $85.00 per person includes instruction\, all supplies\, all materials\, and take home fresh ravioli with a quart of sauce to take home for each student enough to feed 2/3.  Bread with oil will also be served during this class. DESCRIPTION:WEDNESDAY\, July 15h\, 2026 – BEGINNING BREAD: FOCACCIA BREAD/ART – 11am to 2pm – 14 STUDENTS MAX \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD \nIn this morning class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.  Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). This is a perfect class for beginners and an easy recipe for most anyone to work. Enjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s).  The class teaches each student how to make their own Gnocchi as the main course for dinner.  Staff will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  There will be at least two different types of sauces to top the Gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class. This class will also explore making fresh pasta from scratch using egg\, flour and oil to enjoy with the prepared meatballs as your dinner for the evening.  Our meatball recipe is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include a demonstration on how to  make a fresh Tomato Marinara Sauce from scratch as well as instruction for making fresh pasta.  Each couple will prepare meatballs & fresh pasta in class and learn to prepare a pasta sauce to be used as part of the final meal at the end of the class.  Students will then dine on pasta & meatballs as their dinner for the evening.  An apron is encouraged for this class as each student will be making their own meatballs. Please bring a Cookie Sheet/Baking Sheet to class to transport warm rolls home.  We will learn the ways to form dough\, make a wet sponge from yeast and shape\, stuff & form the rolls with assorted fillings. STUDENTS\nHANDS-ON – SKILLS CLASS – CHEF INSTRUCTED – KID FRIENDLY – TWO DAY WORKSHOP – VEGETARIAN FRIENDLY\nJoin us on for this two day class learning about using working with sour dough & sour dough starters\, or as the Italian’s call it\, “Mother Yeast”.  This workshop is all about exploring bread making.  In this fun\, interactive cooking class students are lead through the basics of yeast doughs and how sour doughs are formed using wild yeast and the fermentation process.  Each student will work at their own station to produce the tasks lead by Owner/Chef Instructor Michelle Gioviti & Mark Armstrong with a discussion period during rise times.  Students will be producing their own breads from scratch.  Aspects of rising times and the process of working the dough will be discussed as well as yeast basics.  The class will be shaping and proofing their own doughs throughout the class.  Each students bread will be baked at the end of the class and students will go home with their breads from class to enjoy.  Sour dough starters may be produced to use at a later date as well.  Aprons are recommended for this class as each student will be working with his or own dough with substantial amounts of flour. $150.00 per person\, pricing includes both days. DESCRIPTION:Sunday\, August 30th\, 2026 – Lasagna & Sauce: MAKING LASAGNA (Take Home Full Lasagna Feeds 6 – 8) – 1pm to 4pm – 14 STUDENTS MAX \nHANDS ON CLASS – VEGETARIAN FRIENDLY – TAKE HOME AND BAKE OR FREEZE \nJoin us in learning to make Lasagna\, or Pasta al Forno as we call it in Italian.  This is the perfect class to prepare a meal for the week ahead of you or take home to freeze to use for a quick dinner in the future. In this hands-on class students learn about different sauces such as basil marinara\, ragu & bechamel sauces.  These sauces will then be used to build the best gourmet lasagna ever – it’s all about the ingredients! A full fillings list of assorted items to layer into the lasagna will also be available for each student such as assorted cheeses\, assorted meats\, sauteed/grilled vegetables and fresh vegetables and more. All the sauces will be made in class to be used to construct a full lasagna for each student to take home.  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a lasagna to cook/freeze that will feed up 6 to 8 adults.  Students will learn tips on how to assemble their own lasagna for consumption later.  All fillings ingredients will be provided from vegetarian to meat options.  *Students need to bring a 9 x 13 rectangular lasagna baking dish\, (we recommend glass or ceramic).  Please note it is okay if your dish is an alternate size but the quantity of ingredients provided is based on a recipe using a 9 x 13 size dish.   A house made lasagna will be made in advance that will be served to the class for a tasting. Aprons are recommended. $95.00 per person includes all supplies to create and make a 9×13 lasagna in class to take home for each student\, class instruction\, light snacks and take home recipes.

Chef Melissa Hawthorne will demonstrate how to roll out the pasta dough and form ravioli stuffed with an assortment of cheeses.  But first\, we will start with a demonstration for making one of the Italians favorite appetizers – Tomato Basil Bruschetta.  We will provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer.  Instructions on making fresh pasta dough and forming Ravioli follows. DESCRIPTION:Sunday\, September 20th\, 2026 –  PASTA LAB: Fresh Ravioli & Fresh Pesto Sauce  (Kids 12 & up are Welcome) – 1PM TO 4PM – 14 MAX. STUDENTS \nHANDS ON CLASS – KIDS WELCOME – VEGETARIAN FRIENDLY – MEAL PREP \nIn this afternoon class\, enjoy learning how to make pasta sauces and fresh ravioli from scratch. In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli.  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  The class will include tastings and snacks during the day as well as an beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $85.00 per person includes instruction\, all supplies\, all materials\, and take home fresh ravioli with a quart of sauce to take home for each student enough to feed 2/3.  Bread with oil will also be served during this class. This is a hands-on type of class perfect for all levels including children.

DESCRIPTION:SUNDAY\, November 22nd\, 2026 – Thanksgiving Cookie Exchange – 2pm – 5pm – 16 STUDENTS  \nHands on Class – Kids Welcome – Perfect Friend Group Class – Baking \nEnjoy an afternoon baking with us a fun day of making cookies.  In this class we will learn the basics of 4 different cookie recipes.  The class will consist of (4) four different groups\, where each group makes a different cookie recipe.  The groups will make and bake off enough of their assigned cookie for everyone share.  Students will go home with a bakers dozen\, or more\, of assorted cookies. Traditional Chocolate Chip\, Buttery Shortbread\, Coconut Macaroons\, and Cantucci\, an Italian Almond Cookie (and perhaps another type of cookie to be determined).  While cookies are baking students will enjoy a full beverage bar set up to make coffee and/or hot chocolate as well as an assortment of teas\, perfect to go with a warm cookie or two when they come out of the oven. Make one kind of cookie\, but go home with four to five different types. Recipes for all cookies will be included in the handout. This class is a hands-on class\, so aprons are recommended.  This is a great class to attend with a friends group or family for some baking fun.  $70.00 per seat includes chef lead cooking class instruction\, printed recipes for all cookies made\, all supplies and groceries needed to produce cookies\, and a bakers dozen of cookies to bring home for each student.
