STUDENTS \nHANDS-ON – SKILLS CLASS – CHEF INSTRUCTED – KID FRIENDLY – TWO DAY WORKSHOP – VEGETARIAN FRIENDLY \nJoin us on for this two day class learning about using working with sour dough & sour dough starters\, or as the Italian’s call it\, “Mother Yeast”.  This workshop is all about exploring bread making.  In this fun\, interactive cooking class students are lead through the basics of yeast doughs and how sour doughs are formed using wild yeast and the fermentation process.  Each student will work at their own station to produce the tasks lead by the Chef instructor with a discussion period during rise times.  Students will be producing their own breads from scratch.  Aspects of rising times and the process of working the dough will be discussed as well as yeast basics.  The class will be shaping and proofing their own doughs throughout the class.  Each students bread will be baked at the end of the class and students will go home with their breads from class to enjoy.  Sour dough starters may be produced to use at a later date as well.  Aprons are recommended for this class as each student will be working with his or own dough with substantial amounts of flour. $150.00 per person\, pricing includes both days. Included: all materials needed\, light beverages & snacks during class\, chef lead cooking instruction\, supplies and ingredients and take home printed recipes.

DESCRIPTION:SATURDAY\, June 14th 2025 – MAKING LASAGNA & SAUCE – 12:00pm to 3:00pm – 14 STUDENTS MAX \nHANDS ON CLASS – VEGETARIAN FRIENDLY – Kid Friendly – TAKE HOME AND BAKE OR FREEZE – *Students must bring a 9 x 13 baking dish. \nJoin us for an Saturday afternoon making Lasagna\, or Pasta Al Forno\, as the Italians say.  In this hands-on cooking class students learn about different sauces such as basil marinara\, meat ragu & creamy bechamel sauces used to create different flavored lasagna. These sauces will then be used to build the best gourmet lasagna ever – it’s all about the ingredients!  A full fillings list of assorted items to layer into the lasagna will also be available for each student such as assorted cheeses\, assorted meats\, sauteed/grilled vegetables and fresh vegetables and more. All the sauces will be made in class to be used to construct a full lasagna for each student to take home.  Students will learn tips on how to assemble their own lasagna for consumption later.  Each student will go home with a lasagna to cook/freeze that will feed up 4 to 8 adults. All fillings ingredients will be provided for the students as well as vegetarian and meat options. *Students need to bring a 9 x 13 (we recommend glass or ceramic) rectangular lasagna baking dish (quantity of ingredients provided is based on recipe using this size) A house made lasagna will be made in advance as an example and will be sampled during class. DESCRIPTION:SATURDAY\, May 31st\, 2025 – Workshop – BEGINNING BREAD: FOCACCIA (Focaccia\, Focaccia Panini\, Focaccia Pizza & Focaccia Art) – 11am TO 2:30PM – 12 STUDENTS MAX *Includes Lunch  \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD & Lunch provided at Venue during class. \nIn this morning class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.  Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. This workshop will also include a break for lunch and show examples of using the Focaccia for Panini Sandwiches and Pizza.  The class includes all ingredients\, supplies and class instruction by the chef including printed recipes for each student as well as lunch for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). The chef will also demonstrate our recipe for a classic hearty meat sauce\, Italian Bolognese Sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into different pasta shapes.  Students may also choose to flavor their pasta if desired. Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making tarts from start to finish in this class. The class will include tastings of a sample tart completed during the class with coffee or beverage as part of the demonstration on finished product.  Each student will go home with two fully cooked tarts. *Two tart pans will be provided for each student to use and take home as a Mother’s Day gift at the end of the class. Each student will work with a butter dough learning to properly mix\, knead\, and form tender scones\, both a savory and sweet variety and will also work with the proper ratio for making buttery shortbread cookies.  The class is all about working with tender doughs & breads and includes one-on-one instruction by the chef.  Baking will also be part of this class and each student will be returning home with an assortment of baked items\, so a container is recommended and/or a sheet pan to transport home.  Students will work at individual stations and be provided all the necessary supplies\, ingredients\, groceries\, and utensils needed to prepare the day’s recipes. Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making tarts from start to finish in this class. The class will include tastings of a sample tart completed during the class with coffee or beverage as part of the demonstration on finished product.  Each student will go home with two fully cooked tarts. *Two tart pans will be provided for each student to use and take home as a gift at the end of the class. $150.00 Per person\, includes all ingredients and supplies for class; Chef led class instructions & recipes included. Each student will be working with their own dough to create a filled tart to take home.  Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making a tart from start to finish in this class. Finished Tarts may be be baked at home or in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. Please bring a Cookie Sheet/Baking Sheet to class to transport warm rolls home.  We will learn the ways to form dough\, make a wet sponge from yeast and shape\, stuff & form the rolls with assorted fillings. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). Rising time and working the dough will be discussed.  Each bread will be baked in class and students will go home with their finished baked breads.  Aprons are recommended as students will be working with substantial amounts of flour.  $65.00 per person\, includes light beverages & snacks as well as all supplies\, ingredients\, chef lead cooking instruction and printed recipes.

STUDENTS  \n**This class is pending on the availability of local citrus** – *Florida Citrus has undergone a large decrease over the last decade due to Citrus Greening.  This means the availability of us getting local citrus has decreased and is not readily sold or obtained anymore in our state.  For the preserving we do in this class we need local fruit\, fresh picked and organic.  For this reason we have made this class a pending class and if we can not get enough donations or if the citrus crop is not available we will cancel the class.   \n*WE ARE IN NEED OF ORGANIC LOCAL CITRUS FOR THIS CLASS  – DONATE AND RECEIVE A $15 DISCOUNT.  \nCitrus Types Needed: Meyer Lemons\, Tangerines\, Honey Bell Oranges\, Kumquats\, and any Blood Orange or Red Grapefruit types.  \nDate was changed from 01/18 to 01/11th as citrus is developing now.  \nHands On Class   –  Vegetarian Friendly – Preserving  \nEnjoy an afternoon with the Chef and Owner of the Fat Tuscan learning about Salt & Sugar preserving.  December & January are great months in which Florida has an abundance of wonderful citrus with many of our own trees hanging full and low with sweet tangy fruit.  The class will go over methods on types of traditional preserving as well as making an assortment of Citrus Preserves such as candied orange peel\, Country Lemons (Preserved Lemons)\, and Lemon Curd.  Some citrus will be provided\, but if you have your own citrus trees bring some to share with the class.  Fresh local varieties always offer the best flavors with no pesticides. The class is $65 per person and will include light beverages\, all supplies\, utensils\, canning jars\, cooking class instruction\, ingredients & printed recipes for students to take home.  \n*Reservation Pricing is only $15 to reserve a spot\, as this class is dependent on getting local citrus.  Should the class be cancelled a refund will be issued or the final balance will be due at the time of the class.  \nBalance of $50 will be due at the class.  \n  \n

Students will learn about the different types of crepes enjoyed which include both sweet and savory flavorings and fillings. Each student will flip and form their own crepes as part of this class.  This is a perfect time to enjoy a morning brunch served with mimosas or Bellini’s as well as a full buffet of freshly made foods alongside the class.  Students will learn to make\, form and\, yes\, flip crepes in the air! The class consists of some observation and some hands-on. $70.00 per person\, includes class instructions\, recipes\, a full brunch buffet\, and a variety of sweet and savory crepe fillings. In this interactive cooking class students will learn to make authentic Italian Meatballs and a savory Basil Marinara Sauce.  The recipes shared in this class are original recipes from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include a chef lead demonstration on making a fresh Tomato Sauce\, Basil Marinara\, from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs. Tastings of the finished products are offered at the end of the class. Also\, students will go home with meatballs and a container of tomato sauce to share or freeze to eat for a later date.  This is an hands on Cooking Class so aprons are recommended.  An apron is encouraged for this class as each student will be making their own meatballs.  Students will go home with enough Meatballs & Sauce to Feed 4/6 individuals.  $75.00 per person. DESCRIPTION:MONDAY\, December 23rd 2024 – Lasagna & Sauce: MAKING LASAGNA (Take Home Full Lasagna Feeds 6 – 8) – 5:30 to 8PM – 14 STUDENTS MAX \nHANDS ON CLASS – VEGETARIAN FRIENDLY – TAKE HOME AND BAKE OR FREEZE \nJoin us this Monday before Christmas and learn to make Lasagna\, or Pasta al Forno as we call it in Italian.  This is a perfect class to get ready for Christmas\, as there is nothing better than having a homemade Lasagna ready to pop in the oven for all that Holiday Company.  In this hands-on class students learn about different sauces such as basil marinara\, ragu & bechamel sauces.  These sauces will then be used to build the best gourmet lasagna ever – it’s all about the ingredients! A full fillings list of assorted items to layer into the lasagna will also be available for each student such as assorted cheeses\, assorted meats\, sauteed/grilled vegetables and fresh vegetables and more. All the sauces will be made in class to be used to construct a full lasagna for each student to take home.  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a lasagna to cook/freeze that will feed up 6 to 8 adults.  Students will learn tips on how to assemble their own lasagna for consumption later.  All fillings ingredients will be provided from vegetarian to meat options.  *Students need to bring a 9 x 13 rectangular lasagna baking dish\, (we recommend glass or ceramic).  Please note it is okay if your dish is an alternate size but the quantity of ingredients provided is based on a recipe using a 9 x 13 size dish.   A house made lasagna will be made in advance that will be served to the class for a tasting. Aprons are recommended. $85.00 per person includes all supplies to create and make a 9×13 lasagna in class to take home for each student\, class instruction\, light snacks and take home recipes.

Its the perfect thing to have on hand for company or even to bring to a holiday celebration with friends. This class is for anyone who wants to bring a freshly made pie to their holiday meal to impress everyone.  Students will learn the process for make fresh pie dough from scratch\, rolling it out\, filling it and creating lattice work for the top.  Each student will make their own pie dough from scratch using a butter dough recipe.  The fresh pie dough will then be used in class for the student to make one full pie to bake at home later.  This is a perfect class for learning to make pies for the upcoming holiday season.  Students will have a few different options for fillings such as Fruit\, Chocolate\, Apple and Pumpkin.  (*Each student needs to bring one 8” or 9” inch GLASS PIE PANS.  The pies will be taken home to be baked at a later date.)  Aprons are recommended as this is a hands-on class.  $65.00 per person\, includes all groceries\, supplies\, chef class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class. Our original recipe Ricotta cheesecake has a light and fluffy texture and is the key to its success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan owner and chef\, Michelle Gioviti.  In this hands on class students will make an individual cheesecake to take home which serves 8 to 12 people.  Assorted flavors will be available for each student to choose a favorite combination to make for their individual cheesecake. The chef will prepare a cheesecake in class as part of the teaching instruction. A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome.  *Individual baking will be done at home. *Students need to bring an 8 or 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however. $70.00 per person\, includes all ingredients to prepare an a 9/10 inch cheesecake\, flavorings\, fillings and toppings for assorted varieties of cheesecake as well as printed recipes for each student to take home. A full fillings list of assorted items to layer into the lasagna will also be available for each student such as assorted cheeses\, assorted meats\, sauteed/grilled vegetables and fresh vegetables and more. All the sauces will be made in class to be used to construct a full lasagna for each student to take home.  Students will learn tips on how to assemble their own lasagna for consumption later. Some of you might know Joe from his Micanopy store or as one of the bread vendors at a few of the local farmers markets here in town.  He is a local activist for growers and has been baking his Organic Artisan Sourdough breads and perfecting the techniques needed to adapt to our particular climate here in the South for over 16 years.  His coffee & bakehouse is located in Micanopy; only a short drive from Gainesville\, where he still uses his brick wood fired oven he built from scratch for his breads.  Join us for a full day of learning about sour dough bread\, the art of making starters in our climate\, the techniques and tips and tricks for forming and baking and more.  Each student will receive a Sour Dough Starter to take home and work with for future breads as well as make & bake a full bread during the class. The class consists of some observation and some hands-on to learn cooking techniques. In this hands-on class\, couples cook and prepare a meal for the evening for them to enjoy together. This class will explore making fresh pasta from scratch using potato\, egg & flour. Enjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s).  The class teaches each student how to make their own Gnocchi as the main course for dinner.  Staff will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  There will be at least two different types of sauces to top the Gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class. The class will first start out however with each student preparing an individual Tiramisu\, a classic Italian dessert. STUDENTS \nHANDS ON CLASS – KIDS WELCOME – VEGETARIAN FRIENDLY – MEAL PREP – *Bring a sheet pan or foil pan  \nIn this afternoon class\, enjoy learning how to make pasta sauces and fresh ravioli from scratch. In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli. (Basil will be sourced from a local organic farm).  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  *Please bring a sheet pan or take-home container to transport fresh ravioli.  The class will include tastings and snacks during the day as well beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $75.00 per person includes instruction\, all supplies\, all materials\, and a ravioli dinner (At least Serving Two) with sauce to take home for each student.  Bread with oil will also be served during this class. STUDENTS  \nHANDS ON CLASS & CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – TAKE HOME MEAL – KID FRIENDLY \nJoin us for this fun Saturday morning class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include instructions how making a fresh Tomato Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs.  At the end of class students will go home with meatballs and a container of tomato sauce to share or freeze for a later date.  This is an hands on Cooking Class\, an apron is recommended.  While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and this can be a great alternative meal for guests. An apron is encouraged for this class as each student will be making their own meatballs.  $75.00 per person. DESCRIPTION:THURSDAY\, September 19th 2024 – Intermediate Bread Class – WORKING WITH ENGLISH MUFFINS –   12 Students Max.  11am – 2pm \nHands On – Vegetarian Friendly – Baking – Aprons & a sheet pan or container is recommended to carry finished muffins home  \nLearn to create soft\, chewy English Muffins from scratch and become your own “muffin man”. Join us for this fun afternoon class where we explore the process of making English Muffins.  In this class students will be learning about fortified doughs\, brioche type dough and the process used for creating this type of bread dough.  Each student will learn to form\, rise\, shape & grill the dough to create these tender treats.  Baking will be done in class and students will go home with hot fresh muffins.  Students learn how to combine ingredients\, knead bread\, rise yeast doughs and to form the savory sweet dough from scratch with discussions on rising time and shaping the bread as well.  This hands-on class provides all the raw ingredients and one-on-one instructions from our chef on the intricacies of bread making.  Each student will work at their own station and work with their own dough.  Students will also be using a pan to ‘grill’ each muffin.  Rising time and working the dough will be discussed.  Aprons are recommended for this class as each student will be working with substantial amounts of flour.  $70.00 per person\, includes light beverages & snacks as well as cooking instructions and recipes. This class will cover the classic favorite Italian Dessert known as Tiramisu where each student will create a full dessert that serves 8/12 people to take home and enjoy later.  Tiramisu uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu\, layers of expresso dipped cookies and rich chocolate shavings for a perfect dessert that requires no baking. In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies for layering as well as how to create the espresso syrup for soaking the cookies. *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. STUDENTS \nHands On Class – Vegetarian Friendly – Kid Friendly – Couples Cooking or Great Date Night Activity \nEnjoy an evening learning to form and make fresh Ravioli from scratch.  In this fun & interactive class students learn to make fresh ravioli from an egg & flour pasta dough.  Then\, the Chef demonstrates how to roll out the pasta dough and form ravioli stuffed with an assortment of cheeses.  But first\, we will start with a demonstration for making one of the Italians favorite appetizers – Tomato Basil Bruschetta.  We will provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer.  Instructions on making fresh pasta dough and forming Ravioli follows. Of course the night ends with each student enjoying their fresh ravioli with a choice of freshly made sauces for their evening meal.  There will be at least two different types of sauces to top the ravioli.  At the end of the class\, the fresh ravioli will be cooked by our staff.  There will be several sauces available to top the ravioli\, both vegetarian.  This class is a hands-on class where students will be working with a substantial amount of flour\, so aprons are recommended.  Student will be working with their own dough. $75.00 per person\, includes appetizer of bruschetta & a dinner of fresh ravioli topped with sauce. DESCRIPTION:WEDNESDAY\, September\, 4th 2024  – ALL ABOUT TARTS  – 12pm to 2:00pm  –  12 Students Max  \nBaking – Hands On Class – Kid Friendly – *Please bring a 9 inch tart pan with a removable bottom & a cookie sheet. \nJoin us for a fun morning working with Tarts.  Students will learn to make a dough from scratch and how to work with a butter dough as well as learn to form and decorate an individual Tart.  In this cooking class\, Chef & Owner Michelle Gioviti\, guides students through making a butter tart dough from scratch with techniques for filling\, designing and baking. Each student will be working with their own dough to create a filled tart to take home.  Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making a tart from start to finish in this class. Finished Tarts may be be baked at home or in class; add an additional 30 minutes to class time if baking in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. Aprons are recommended. *A 9 inch or smaller removable bottom tart pan and a Cookie Sheet is required for this class.   $65.00 per person\, includes all groceries\, supplies\, tools\, chef class instruction and printed recipes.
