The class also teaches how to prepare a fresh alfredo sauce to pair with the pasta. Students will be making their own pasta from scratch as well as cutting and shaping it into Fettuccine. The instructor demonstrate the best fresh classic Alfredo sauce during the class. Students will then be consuming their pasta at the end of class\, so come prepared to eat. The class will first start out however with the preparation of individual Tiramisu’s. The class includes a dinner of fresh made pasta with a choice of sauce & dessert. An apron is encouraged for this class as each student will be working with flour and dough at their own stations. DESCRIPTION:Guest Chef Series – Guest Chef\,  Fysh\, Owner of the Local business Proud Pickles \nSunday\, August 18th 2024 –  All About Pickling; Knife Skills; Processing\, Preserving & Fermenting – 2pm – 5pm – 14 Students Max.  \nHands On Class – Vegetarian Friendly – Knife Skills – Preserving/Ferments \nJoin us for this special guest chef series class on Pickling and learn everything you ever wanted to know about processing\, preserving and fermenting foods. In this class\, Fysh Gurman owner of Proud Pickles\, joins us to teach us all about preserving.  Proud Pickles\, which is a local small vendor and a usual stall at our farmers markets selling unique and interesting specialty pickled products.  Fysh makes all his products from scratch and sources the most local and fresh produce from our area as possible.  He can be found most Mondays selling at our local farmers market located at Cypress and Grove here in downtown Gainesville which is held every Monday evening.  In this class\, Fysh will teach basic knife skills for chopping and processing local vegetables for the fermenting process as well as leading several discussions on types of spices & flavorings used in preserving.  This class focuses on teaching the science behind the Fermentation process as well.  Each student will make and process a couple different types of foods including Pickles & Ferments which they will take home to enjoy later.  Tasting of all the types of pickles from Proud Pickles will be available as part of the class. Added to the class the chef will also talk about ways to use brines and fermented foods in everyday cooking such as soups\, stir-frys and as condiments.  The class consists of some observation and some hands-on learning techniques for preserving. All ingredients will be provided by Fat Tuscan.  Aprons are recommended and note taking is encouraged. Each student will work at their own station and work with their own products for processing pickles.  $80.00 per person\, includes light beverages & snacks as well as all supplies\, ingredients\, chef lead cooking instruction.  Students will go home with several pickled and fermented products to share later. *For the Knife Skill portion – Students may observe or work hands-on – please ask for a release waiver at the class which will be required for hands-on participation however.

STUDENT SIGN UP.  \n*Hands On Class – Kids Welcome – Take home and Bake (** Must bring an 8 or 9 inch spring form pan and a sheet pan to take cheesecake home) – Aprons Recommended \nDo you love making desserts?  Learn to create our signature light and fluffy Ricotta style cheesecake.  This class is for those students that love to bake but might find cheesecakes frustrating.  Our original recipe Ricotta cheesecake has a light and fluffy texture and is the key to its success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan owner and chef\, Michelle Gioviti.  In this hands on class students will make an individual cheesecake to take home which serves 8 to 12 people.  Assorted flavors will be available for each student to choose a favorite combination to make for their individual cheesecake.  The chef will prepare a cheesecake in class as part of the teaching instruction. A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome.  *Individual baking will be done at home. *Students need to bring an 8 or 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however. $70.00 per person\, includes all ingredients to prepare an a 9/10 inch cheesecake\, flavorings\, fillings and toppings for assorted varieties of cheesecake as well as printed recipes for each student to take home. DESCRIPTION:SUNDAY\, August 11TH\, 2024 – BEGINNING BREAD: FOCACCIA BREAD/Focaccia Art – 2 PM TO 5 pm – 12 STUDENTS MAX \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD \nIn this afternoon class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.  Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). This is a perfect class for beginners and an easy recipe for most anyone to work. DESCRIPTION:SATURDAY\, August 10th 2024 – PASTA: MAKING LASAGNA & SAUCES – 1:00pm to 3:00pm – 14 STUDENTS MAX \nHANDS ON CLASS – VEGETARIAN FRIENDLY – TAKE HOME AND BAKE OR FREEZE – *Students must bring a 9 x 13 baking dish. \nJoin us for an Saturday afternoon making Lasagna\, or Pasta Al Forno\, as the Italians say.  In this hands-on cooking class students learn about different sauces such as basil marinara\, meat ragu & creamy bechamel sauces used to create different flavored lasagna. These sauces will then be used to build the best gourmet lasagna ever – it’s all about the ingredients!  A full fillings list of assorted items to layer into the lasagna will also be available for each student such as assorted cheeses\, assorted meats\, sauteed/grilled vegetables and fresh vegetables and more. All the sauces will be made in class to be used to construct a full lasagna for each student to take home.  Students will learn tips on how to assemble their own lasagna for consumption later.  Each student will go home with a lasagna to cook/freeze that will feed up 4 to 8 adults. All fillings ingredients will be provided for the students as well as vegetarian and meat options. *Students need to bring a 9 x 13 (we recommend glass or ceramic) rectangular lasagna baking dish (quantity of ingredients provided is based on recipe using this size) A house made lasagna will be made in advance as an example and will be sampled during class. But first\, we start the class by teaching couples how to make Bruschetta for students to enjoy.  The chef will also demonstrate our recipe for basil pesto sauce with a tasting for each student.  Alfredo sauce will also be demonstrated during the class\, and you will have a choice of Alfredo or Pesto to choose from to top your pasta at the end of class.  As the fresh sauce bubbles away\, students will learn from hands on application on how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into Fettuccine; other shapes will be taught as well.  At the end of class\, we will cook each individual pasta for you to eat and dine on the fresh pasta you made in class. DESCRIPTION:SATURDAY\, August 3rd\, 2024 – BEGINNING BREAD: FOCACCIA BREAD/Focaccia Art – 11am TO 2 PM – 12 STUDENTS MAX \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD \nIn this morning class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.  Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on herb flavorings to create an individual flavor bread of choice as well as an assortment of toppings to decorate the tops of their breads prior to baking.  All about bread making and decorating to make an edible beautiful bread to take home. Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). This is a perfect class for beginners and an easy recipe for most anyone to work. We will start with a demonstration for making one of Italy’s favorite appetizers – Tomato Basil Bruschetta. We provide each Couple with a DIY Bruschetta board and all the things needed to create your very own appetizer as the instructor leads you through the proper preparation. The chef will also demonstrate our recipe for a classic hearty meat sauce\, Italian Bolognese Sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into different pasta shapes.  Students may also choose to flavor their pasta if desired. An apron is encouraged for this class as each student will be making their own meatballs.  $75.00 per person. DESCRIPTION:THURSDAY\, July 11th 2024 – BEGINNING BREAD: MAKING ROSEMARY FOCACCIA BREAD – 11am TO 2 PM – 12 STUDENTS MAX \nHANDS ON CLASS – KID FRIENDLY – VEGETARIAN FRIENDLY – TAKE HOME BREAD \nIn this morning class students will learn how to make the Classic Italian flat bread know as Focaccia Bread.    Focaccia is an Olive Oil laden style bread that is eaten on its own\, split in half for sandwiches or as thick pizza crust.  In this class\, students will learn to create their own dough using flour\, water\, yeast\, salt and olive oil creating a type of wet yeast dough. Yeast development\, mixing\, kneading and rising times as well as shaping the bread and baking will be included in the class.  Students will also have choices on flavorings such as herbs or sweet toppings to create a savory or sweet style bread of choice.  Class will include all ingredients\, supplies and class instruction by the chef including printed recipes for each student.  Students are recommended to wear an apron.  Feel free to bring a sheet pan or a baking pan with a slight lip  for transportation of the hot bread home.  Samples will also be eaten in class.  (Baking & Baking pans will be provided by the Fat Tuscan). In this cooking class students will learn to make a butter tart dough from scratch with techniques for filling\, designing and baking. Each student will be working with their own dough to create a filled tart to take home.  Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes. During class the chef prepares a tart with the class and a discussion on techniques will be given. A discussion and example of how to do lattice work and design work for the top of the tarts will also be discussed.  Each student will be making a tart from start to finish in this class. Finished Tarts may be be baked at home or in class; add an additional 30 minutes to class time if baking in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. Students work with the chef\, who chooses 3 different types of soups\, to create an afternoon of soups to enjoy for lunch. In this class we will be making soups from scratch using fresh ingredients and building flavors; stocks and soup flavors will be explored in this series. Students will participate in the chopping and peeling of ingredients and are encouraged to interact with questions during the class. Some of the class will also consist of observation of the instructor preparing the different soups. Note taking during the preparation is recommended as many aspects of creating the dish are discussed during cooking. Students will sample and dine on all the prepared dishes in class. STUDENTS  \nHANDS ON CLASS – CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – TAKE HOME MEAL \nJoin us for this fun afternoon class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include instructions how making a fresh Tomato Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs.  At the end of class students will go home with meatballs and a container of tomato sauce to share or freeze for a later date.  This is an hands on Cooking Class\, an apron is recommended.  While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and this can be a great alternative meal for guests. An apron is encouraged for this class as each student will be making their own meatballs.  $75.00 per person. STUDENTS  \nHANDS ON CLASS – CHEF DEMONSTRATION – GLUTEN-FREE FRIENDLY – TAKE HOME MEAL \nJoin us for this fun afternoon class learning to make big\, juicy balls.  In this interactive cooking class students will learn to make authentic Italian Meatballs.  The recipe shared in the class is an original recipe from the Fat Tuscan which not only produces the biggest balls around but are also known for their moist and flavorful character.  The class will also include instructions how making a fresh Tomato Sauce from scratch.  Each student will prepare meatballs in class and learn to prepare a pasta sauce to be used with the meatballs.  At the end of class students will go home with meatballs and a container of tomato sauce to share or freeze for a later date.  This is an hands on Cooking Class\, an apron is recommended.  While pasta and bread are the foundation of Italian cuisine\, numerous Italian dishes are naturally gluten free friendly and this can be a great alternative meal for guests. This class will cover the classic favorite Italian Dessert known as Tiramisu where each student will create a full dessert that serves 8/12 people to take home and enjoy later.  Tiramisu uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu\, layers of expresso dipped cookies and rich chocolate shavings for a perfect dessert that requires no baking. In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies for layering as well as how to create the espresso syrup for soaking the cookies. *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. In this class we will be making soups from scratch using fresh ingredients and building flavors; stocks and soup flavors will be explored in this series. Students will participate in the chopping and peeling of ingredients and are encouraged to interact with questions during the class. Some of the class will also consist of observation of the instructor preparing the different soups. Note taking during the preparation is recommended as many aspects of creating the dish are discussed during cooking. Students will sample and dine on all the prepared dishes in class. (Intermediate Class – Requires timing – Kid Friendly (ages 12 and up)  \nHands On Class – Intermediate Level Class \nJoin us at this interactive cooking class exploring the art of Pastry dough. Students learn how to make a type of cooked pastry dough known as Pate au choux.  Students will use a stovetop to create the dough\, learn piping skills with warm dough for baking and how to properly cool and fill the pastries they create.  After baking\, and the pastry is cool\, students will have a choice of different cream fillings to fill the pastry.  Warm chocolate will also be available to drizzle over the top. The class focuses on piping skills\, cooking the correct consistency for the dough and filling the pastry’s. This class requires some detailed work such as piping and filling warm delicate pastries as well as timing and basic pastry dough requirements.  Each student will go home with an assorted mix of pastries.  Please bring a container for your finished pastries to be taken home. This class will cover the classic favorite Italian Dessert known as Tiramisu where each student will create a full dessert that serves 8/12 people to take home and enjoy later.  Tiramisu uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu\, layers of expresso dipped cookies and rich chocolate shavings for a perfect dessert that requires no baking. In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies for layering as well as how to create the espresso syrup for soaking the cookies. *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. STUDENTS \nHands On Class   –  Vegetarian Friendly – *Bring local organic citrus if you have it. \nEnjoy an afternoon with the Chef and Owner of the Fat Tuscan learning about Salt & Sugar preserving.  December & January are great months in which Florida has an abundance of wonderful citrus with many of our own trees hanging full and low with sweet tangy fruit.  The class will go over methods on types of traditional preserving as well as making an assortment of Citrus Preserves such as candied orange peel\, Country Lemons (Preserved Lemons)\, and Lemon Curd.  Some citrus will be provided\, but if you have your own citrus trees bring some to share with the class.  Fresh local varieties always offer the best flavors with no pesticides. The class is $65 per person and will include light beverages\, all supplies\, utensils\, canning jars\, cooking class instruction\, ingredients & printed recipes for students to take home. *WE ARE IN NEED OF ORGANIC LOCAL CITRUS FOR THIS CLASS  – DONATE AND RECEIVE A DISCOUNT.

STUDENTS \nHands On Class – Vegetarian Friendly – Kid Friendly – Gluten Free  \nEnjoy an afternoon with the Chef and Owner of the Fat Tuscan learning about stocking your kitchen with flavor.  In this class students will learn about flavoring Olive oil for use in the kitchen\, working with fresh herbs and dried herbs and creating rubs & tapenades used for enhancing the flavors in your kitchen cooking.  The class will provide jars to take home for your pantry.  If you have any fresh herbs growing in your garden\, feel free to bring them and we will show you how to dry them and use them in cooking.  The class is $65 per person and will include light beverages\, all supplies\, utensils\, glass jars\, cooking class instruction\, ingredients & printed recipes for students to take home.

STUDENTS   \nOBSERVATION & DEMONSTRATION CLASS – WINE TASTING – DATE NIGHT – FRESH COOKING \nIn this special holiday themed cooking class we explore a multiple coursed dinner prepared fresh by our owner and Chef Gioviti live in front of you.  This class focus’s on wines from various regions of Europe fit for holiday festivity as well as complimenting each course served throughout the night. During the evening students enjoy a discussion lead by the chef about the recipes and preparation methods as well as information on the evenings featured wines. Guests will watch as fresh gourmet food is prepared and paired with wines for the evening.  Each course has a hand-selected wine paired for you to taste with it. This is a great date night or fun night out with friends eating great food and drinking even better wines.  All to get you in the spirit! Tastings\, dinner\, and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves.  The menu varies and is not set until the week of the class to utilize the freshest seasonal ingredients on the market but meat & possibly seafood is planned for this dinner.  $100.00 Per Person includes a 4 course dinner with 4 to 5 different wines tasted throughout. *Proper ID is required to attend.
