(Intermediate Class – Requires timing – Kid Friendly (ages 12 and up)  \nHands On Class – Intermediate Level Class \nJoin us at this interactive cooking class exploring the art of Pastry dough. Students learn how to make a type of cooked pastry dough known as Pate au choux.  Students will use a stovetop to create the dough\, learn piping skills with warm dough for baking and how to properly cool and fill the pastries they create.  After baking\, and the pastry is cool\, students will have a choice of different cream fillings to fill the pastry.  Warm chocolate will also be available to drizzle over the top. The class focuses on piping skills\, cooking the correct consistency for the dough and filling the pastry’s. This class requires some detailed work such as piping and filling warm delicate pastries as well as timing and basic pastry dough requirements.  Each student will go home with an assorted mix of pastries.  Please bring a container for your finished pastries to be taken home. Each student will go home with a lasagna to cook at home that will feed up 4 to 6 adults. All fillings  ingredients will be provided for the students as well as vegetarian and meat options.  *Students need to bring a 9 x 13 glass or ceramic rectangular lasagna baking dish – (quantity of ingredients provided based on using this size dish)  A house made lasagna will be made in advance that will be served to the class for a tasting. This class focuses on whiskey tasting\, pairing whiskey with food\, and complimenting the flavors of each course with the selected spirit served throughout the night. In this 4-course dinner\, owner and Chef Michelle Gioviti\, will use each selected tasting in each course enhancing the flavors of the dish. In this fun and interactive day class spend an afternoon with our chef learning the art to fresh pasta.  Ravioli is made from an egg and flour pasta dough and stuffed with an assortment of cheeses. The class will include instruction on proper pasta dough and then an demonstration on how to roll out the dough to form individual raviolis.  Students will then take home their fresh ravioli to share with their family to eat.  In addition\, the chef will also prepare two different sauces: Basil Marinara & Fresh Pesto\, both of which will be an option to take home with your ravioli.  This class is a hands-on class in which students work with flour & egg\, so aprons are recommended.  *Please bring a sheet pan or take-home container to transport fresh ravioli.  The class will include tastings and snacks during the day as well beverage.  Cooking class instruction from our chef and printed recipes are part of every class.  $65.00 per person includes instruction\, all supplies\, all materials\, and a ravioli dinner with sauce to take home for each student.  Bread with oil will also be served during this class. Types of cookies; Traditional Chocolate Chip\, Buttery Shortbread\, Coconut Macaroons\, and Cantucci\, an Italian Almond Cookie (and perhaps another type of cookie to be determined). While cookies are baking students will enjoy coffee and/or hot chocolate and a warm cookie or two out of the oven. Make one kind of cookie\, but go home with four to five different types. Recipes for all cookies will be included in the handout. This class is for anyone who wants to bring a freshly made pie to their holiday meal to impress everyone.  Students will learn the process for make fresh pie dough from scratch\, rolling it out\, filling it and creating lattice work for the top.  Each student will make their own pie dough from scratch using a butter dough recipe.  The fresh pie dough will then be used in class for the student to make one full pie to bake at home later.  This is a perfect class prior to the Thanksgiving Holiday or for learning to make pies for the upcoming holiday season around the corner.  Students will have a few different options for fillings such as Chocolate\, Apple and Pumpkin.  (*Each student needs to bring one 8” or 9” inch GLASS PIE PANS.  The pies will be taken home to be baked at a later date.)  Aprons are recommended as this is a hands-on class.  $65.00 per person\, includes all groceries\, supplies\, chef class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class. Each student will be working with their own dough to create a filled tart to take home.  Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes. During class the chef prepares a tart with the class and a discussion on techniques will be given. A discussion and example of how to do lattice work and design work for the top of the tarts will also be discussed.  Each student will be making a tart from start to finish in this class. Finished Tarts may be be baked at home or in class; add an additional 30 minutes to class time if baking in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. STUDENT SIGN UP.  \nHands On Class  – Kid Friendly – *Bring a 8 inch or 9 inch Springform Pan. \nDo you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake\, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  Join us in this Saturday afternoon class learning about our Ricotta Cheesecake recipe developed by the Fat Tuscan chef.  Each student will be making an individual cheesecake to take home.  The chef will prepare a cheesecake in class alongside everyone as an example showing proper techniques creating this dessert. A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome. (Kids Welcome)  \nCLASS TAUGT BY STAFF & HEAD PASTRY CHEF SIENNA CURCIO  \nHands On Class – Kid Friendly – *Please bring a 9 inch tart pan with a removable bottom & a cookie sheet. \nJoin us on a Saturday morning and learn to make\, form and decorate a Tart.  In this cooking class\, staff Pastry Chef Sienna will guide students through making a butter tart dough from scratch with techniques for filling\, designing and baking. Each student will be working with their own dough to create a filled tart to take home.  Various toppings and ingredients will be provided for students to choose from such as fruit jams and compotes for their filling choice. During class the instructor will prepare a tart with the class as an example and lead a discussion on techniques followed by guidance of how to do lattice work and design work for the top of the tarts.  Each student will be making a tart from start to finish in this class. Finished Tarts may be be baked at home or in class; add an additional 30 minutes to class time if baking in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. This class will be limited in spots so that one-on-one training and teaching can be offered to every student.  We will demonstrate techniques and cooking skills for you to execute on your own and have a question-and-answer period during lunch. We start the class by making an appetizer of fresh Bruschetta for students to enjoy.  The chef will also demonstrate our recipe for a classic Italian Bolognese sauce which is a hearty meat sauce.  The fresh sauce will bubble away during the length of the class while the class learns how to make fresh pasta using flour\, oil and egg.  Students will learn to make pasta dough from scratch and how to shape it and cut it into Fettuccine.  We will then cook each individual pasta for you to eat and dine on the fresh pasta you made in class.  Two sauces will be available both a meat sauce and a vegetarian marinara sauce.  An apron is encouraged for this class as each student will be making their own pasta using a substantial amount of  flour.  * Students will be consuming their results at the end of class with a choice of the prepared sauces as well as an appetizer of bruschetta to start the class\, so come prepared to eat.  $75.00 per person includes all ingredients\, printed recipes\, appetizer and dinner of fresh made pasta with a choice of fresh sauce made in class.  *Wine is available to purchase by the glass or by the bottle from our wine retail area.

STUDENTS \nHANDS ON CLASS – COUPLES COOKING – VEGETARIAN FRIENDLY – GLUTEN FREE FRIENDLY \nEnjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  This cooking class will teach you how to make your own gnocchi as the main course for your evening dinner.  But first we will start with a demonstration for making one of the Italians’ favorite appetizer – Tomato Basil Bruschetta.  We will provide each couple with a DIY bruschetta board and all the things needed to create your very own appetizer.  Instructions on making gnocchi follow and then we cook each student’s fresh gnocchi for them to enjoy with a choice of fresh made sauces for their evening meal.  There will be at least two different types of sauces to top the gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  please indicate during sign up if you need Gluten Free for your station. $75.00 per person\, includes appetizer of tomato bruschetta\, gnocchi dinner with choice of sauce\, light beverages\, hands-on chef lead cooking instruction\, all supplies and ingredients and printed recipes.  *Wine will be available to purchase from our wine retail area.

Soups always make a perfect tasty meal to prepare as well as an healthy option most times. With the hot summer months in mind the chef chooses 3 different types of soups to create with the class.  In this class we will be making soups from scratch using fresh ingredients and building flavors; stocks and soup flavors will be explored in this series. Students will participate in the chopping and peeling of ingredients and are encouraged to interact with questions during the class.  Some of the class will also consist of observation of the instructor preparing the different soups.  Note taking during the preparation is recommended as many aspects of creating the dish are discussed during cooking.  Students will sample and dine on all the prepared dishes in class.  The class Includes light beverages\, cooking instruction\, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an lunch meal of three types of soups.  Some soup will be available to take home as well to be enjoyed at a later date. $65.00 per person\, includes meal of soups served with toasted bread\, light beverages and recipes to take home.

DESCRIPTION:SATURDAY\, AUGUST 19TH 2023 – DESSERT: MAKING CHEESECAKE – 1PM TO 3PM – 14 MAX STUDENTS \nHANDS ON CLASS – KID FRIENDLY – TAKE HOME AND BAKE – *Students must bring a springform pan \nDo you love making desserts?  Have you been a customer who loved the Fat Tuscan’s light & fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake\, or who find desserts frustrating.  Our customers loved the cheesecakes from our café with their light and fluffy texture which was the key to their success.  This class will go over the original recipe Ricotta Cheesecake developed by Chef Michelle\, owner and founder of The Fat Tuscan.  Each student will be making an individual cheesecake to take home.  Students will also have a variety of flavors to choose from for their cheesecakes from Tiramisu\, Strawberry\, Lemon\, Chocolate\, Chocolate Chip and many more.  The chef will prepare a cheesecake alongside the class teaching proper mixing\, folding of ingredients and a discussion on baking.  Each student makes a cheesecake to take home of their desired flavor.  The class will include all ingredients and supplies needed to produce a full cheesecake to take home; (Take home Class Size feeds 8 t0 12).  A house made cheesecake will be made in advance to eat and to show desired texture and outcome as a tasting after the class.  Students need to bring an 8 or 9 inch springform pan (larger sizes will still use recipes designed for 8 or 9 inch pans.) $70.00 per person includes all ingredients to prepare an individual cheesecake as well as recipes for each student. Light snacks and refreshments will be served. *Individual baking will be done at home.

Students will be making their own pasta from scratch and then learning to knead and roll it out and form them into a variety of shapes as well as preparing individual desserts to consume at the end of the class.  During class\, the instructor will be making a freshly made sauce and provide instructions on the process for making each sauce.  All students will be consuming their results at the end of class with their choice of the prepared sauces\, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. Each student will make their own pie dough\, fill their pie pan and learn lattice working from their dough for the top of the pie.  First the chef leads students through creating pie dough from scratch after which they will demonstrate how to roll the dough out.  Students will have a choice of an assortment of fillings such as jams\, fruit and custards.  After filling the pies the instructor will demonstrate different types of lattice work for topping the pie\, such as basket weave\, strips and design cutouts.  At the end of class\, the pies may be baked in class or taken home to be baked at a later date\, (add an additional 45 minutes for baking time if baking in class).  The instructor will also present a completed pie to taste along with coffee or other beverage as a lite snack at the end of the end of class.  This is a perfect class so that you can take a fresh pie home to show all your friends or maybe enjoy later to wow at a dinner event. *pies freeze well.  Each student needs to bring one 8 or 9 inch pie pan.  Aprons recommended.  $65.00 per person\, includes all groceries\, supplies\, class instruction and printed recipes.

DESCRIPTION:WEDNESDAY\, APRIL 12TH – MAKING GNOCCHI – 14 STUDENTS MAX  – 6PM TO 8:30PM \nHANDS ON CLASS – VEGETARIAN FRIENDLY – KID FRIENDLY – GLUTEN FREE FRIENDLY \nEnjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi in addition to the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of freshly made sauces.  There will be at least two different types of sauces to top the gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  $65.00 per person\, includes gnocchi dinner light beverages\, cooking instruction and printed recipes.

With Florida farms bursting with produce\, our chefs will prepare a unique spring inspired menu using seasonal produce and fresh ingredients in front of you.  Each course has a hand-selected wine paired for you to taste with it.  During class a discussion on preparation is conducted throughout each course as well as details about the paired wines.  This is a great date night or fun night out with friends eating great food and drinking even better wines. At the end of the class\, your ravioli will be cooked for your dinner as part of the class.  We will make several sauce options to top for your ravioli’s; both vegetarian.  This is a great class for a date night or a fun evening out. We start the class by making an appetizer of fresh Bruschetta for students to enjoy followed by a demonstration on making fresh basil pesto.  The chef instructs the class on making a fresh pesto & a creamy sauce during the length of the class.  This class also explores using flavorings in pasta.
