The class will start out teaching the art of making the perfect Tomato Basil & Mozzarella Bruschetta.  Students are also lead through preparing an individual Italian Dessert of Tiramisu to be eaten at the conclusion of the class.  The Chef also prepares a champagne vinaigrette from scratch and serves it atop the salad course. The main entrée will focus on an Interactive lesson on making Gnocchi pasta using potato\, eggs & flour.  A choice of sauces will be available to top the pasta for the evening.  Each paired couple will have a separate station with all supplies\, ingredients and groceries needed to prepare the recipes for the evening. Students will learn to create their own dough using flour\, yeast and olive oil. The instructor will cover mixing\, adding herbs\, rising times\, shaping and baking techniques during class.  Students will also have choices on flavorings for a sweet toppings or savory herb style bread of choice.  Students are recommended to bring a ¼ Sheet pan or a baking pan with a slight lip to rise and bake the flat bread. In this class the chef will demonstrate how to make two different sauces from scratch both a basil marinara sauce and white creamy Bechamel.  Then\, the students will use the fresh sauces to build the best gourmet lasagna.  The class will include a full assortment of different types of fresh and cooked ingredients from vegetarian to meat options for the students to choose from. It’s all about the ingredients!  Students will learn tips on how to assemble\, layer and bake the lasagna as well. Each student will go home with a Lasagna\, (to bake at a later date)\, that will feed up to six people. After the dough is made students will have a choice of an assortment of fillings such as Jams\, fruit and Custards. The recipe we will be using is an original developed at the Fat Tuscan and is perfect for either savory or sweet breads.  Learn to mix\, knead\, rise and shape dough to make an Onion Ricotta Brioche Roll & a Sweet Chocolate Chip Bun.  Also\, learn the ways to form and work with a wet sponge from yeast as well as the proper technique to stuff and form the breads with the assorted fillings. Each student will be handling and making their own bread doughs from scratch. Please bring a sheet pan to rise & bake your breads.  A rolling pin is recommended as well as aprons. The class then demonstrates how to roll out pasta dough to form ravioli.  The instructor teaches how to stuff and form the ravioli with an assortment of cheeses.  At the end of the class\, your ravioli is cooked for your dinner as part of the class.  A choice between pasta sauces\, both vegetarian\, is available to complete the dish.  Students will be working with flour\, so aprons are recommended.  The class includes a beverage\, or you may bring your own bottle of wine (ID Required). This is a great class for a date night or a fun evening out.  Cooking class instruction from our chef and printed recipes are part of every class. $55.00 per person includes instruction\, all supplies\, all materials\, and a full ravioli dinner for each student.  Bread with oil will also be served during this class.

Each student will make an individual cheesecake to take home.  Several types of flavors will be available for each student to choose a favorite to make.  The chef will prepare a cheesecake in class as part of the teaching instruction. DESCRIPTION:Hands on Class – Vegetarian Friendly – Kids Welcome \nJoin us for an evening learning all about the classic Italian flat bread know as Focaccia. Focaccia is an Olive Oil laden style bread that can be eaten on its own\, split in half for sandwiches or as thick pizza crust. Students will learn to create their own dough using flour\, yeast and olive oil. The instructor will cover mixing\, adding herbs\, rising times\, shaping and baking techniques during class.  Students will also have choices on flavorings for a sweet toppings or savory herb style bread of choice.  Students are recommended to bring a ¼ Sheet pan or a baking pan with a slight lip to rise and bake the flat bread. DESCRIPTION:Saturday\, April 16th – Brioche Bread – 11am TO 2PM –  12 Students Max. \nHands On Class – Kid Friendly \nIn this cooking class day workshop students will be working with Brioche Dough.  This is an original recipe dough that the café has developed to make both savory rolls and sweet dessert breads.  Each student will learn to make Onion Ricotta Brioche Rolls & Sweet Chocolate Chip Buns.  Please bring two Cookie Sheets/Baking Sheets to class.  We will learn the ways to form\, make a wet sponge from yeast and stuff them and form them with assorted fillings. A rolling pin is recommended as well for this class\, but one can also be provided for you if needed.  Printed recipes will be given to each student and a discussion on techniques and instructions for the dough and forming the dough will be given.  This class is a hands-on class where each student will be handling and making their own bread dough’s from scratch.  Aprons are recommended.  Samples of breads will be eaten in class.  Please bring a sheet pan to rise your breads on and/or for baking.  $55.00 Per Person includes all supplies\, class instruction\, light snacks\, tastings and recipes to take home.

There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  In this fun and interactive class students will learn to make fresh ravioli from egg and flour.  The class will include instruction and demonstration on how to roll out the dough and form ravioli stuffed with an assortment of cheeses. At the end of the class\, your ravioli will be cooked for your dinner as part of the class.  We will make several sauce options to top for your ravioli’s; both vegetarian.  This is a great class for a date night or a fun evening out. Students will be working with flour & egg to create pasta dough.  Aprons are recommended.  *Students may bring your own bottle of wine. (ID Required). .  Cooking class instruction from our chef and printed recipes are part of every class. $55.00 per person includes instruction\, all supplies\, all materials\, and a full ravioli dinner for each student.  Beverages & Bread with oil will also be served during this class.

Lattice work will also be discussed and students will be encouraged to work on decorating their pies in class.  *Each student MUST bring one 8” or 9” inch GLASS PIE PANS & a Cookie Sheet to transport Hot Pie’s home.  Pies can be taken home to be baked later or we can bake in class.  (Please ADD a minimum of 45 minutes from end of class time for baking time.)  Aprons are recommended as this is a hands-on class and you will be working with flour.  $55.00 per person\, includes all groceries\, supplies\, class instruction & printed recipes.  Snacks will also be provided as well as some tastings during this class.

SUMMARY:Making Flavored Biscotti
DESCRIPTION:Hands On  – Kid Friendly \nIn this cooking class students will learn how to make an Italian favorite traditional Cookie known as Biscotti.  Each student will mix and measure their own batch of dough with various toppings & ingredients.  There will be various types of flavorings to choose from such as almonds\, walnuts\, dried fruits such as cherries and cranberries as well as assorted types of chocolate morsels\, etc.  Students may choose to split their dough’s to make several different types to have an assortment to take home and enjoy. Printed recipes will be given to each student and a discussion on techniques and instruction demonstration for making the dough from scratch will be given in class. This class is a hands-on class and each student will be handling and making their own dough’s.  It is recommended that each student have an apron as well as a container to take home the cookie’s they make in class.  Samples of desserts will be eaten in class as the demonstration portion.  $55.00 per person and includes all ingredients\, supplies\, class instruction & printed recipes for each student. In the class students will learn how to combine ingredients and the proper cooking technique for the perfect crispy texture to these amazing treats. We will also provide a full toppings bar of fresh ingredients typically used in South America. Each student can choose a variety of ingredients to fill or top their created arepas & tostadas.  The class will also have a demonstration on making flan.  The class ends with a sampling of the Flan with fresh brewed Colombian Coffee.  Join Soraya\, a local artist & chef\, learning all about the passion to these wonderful foods from her country. STUDENTS. \nHands On \nBe prepared to bring your competitive nature with you to this fun cooking class challenge. Five couples compete against each other to create\, cook\, prepare and plate recipes for judging.  And\, to make things even harder\, this is all done while sampling different wines throughout the evening.  Five separate table stations are set up with supplies & utensils for creating 3 or 4 recipes chosen by the chef. With only written instructions the students must prepare each recipe in a given time frame.  As each plate is completed it is presented for judging\, after which\, students enjoy their own creations to eat.  The winning couple receives a bottle of wine of choice & bragging rights.  This class explores learning to follow recipes\, food design\, plating & presentation.  The Chef provides assistance during the evening but all cooking and preparations are done by each competing couple.  This class emphasizes the art of cooking together as a team in a fun competitive environment. Tastings\, recipes\, ingredients\, supplies\, utensils and chef instruction is provided.
