The recipe we will be using is an original developed at the Fat Tuscan and is perfect for either savory or sweet breads.  Learn to mix\, knead\, rise and shape dough to make an Onion Ricotta Brioche Roll & a Sweet Chocolate Chip Bun.  Also\, learn the ways to form and work with a wet sponge from yeast as well as the proper technique to stuff and form the breads with the assorted fillings. Each student will be handling and making their own bread doughs from scratch. Please bring a sheet pan to rise & bake your breads.  A rolling pin is recommended as well as aprons. The class includes a demonstration by the instructor for making our signature Almond Pesto Sauce as well as a Creamy Pesto Sauce.  This class explores using flavorings in pasta where students will learn to make either a tomato\, spinach or butternut squash flavored pasta from scratch. (Plain pasta is also taught if no flavoring is desired). Then we will cook your pasta for you at the end of class for you to dine on your freshly made pasta.  An apron is recommended as each student will be making their own pasta for the evening using flour and eggs.  Student may bring your own bottle of wine; proper I.D. Students will learn to create their own dough using flour\, yeast and olive oil. The instructor will cover mixing\, adding herbs\, rising times\, shaping and baking techniques during class.  Students will also have choices on flavorings for a sweet toppings or savory herb style bread of choice.  Students are recommended to bring a ¼ Sheet pan or a baking pan with a slight lip to rise and bake the flat bread. The bread will be baked during class.   $55.00 per Person\, includes all ingredients\, supplies\, class instruction\, bread samplings and printed recipes to take home.  Aprons recommended.

SUMMARY:Traditional Italian Dinner & Wine Tasting
DESCRIPTION:Observation Type Class  –  Vegetarian Friendly \nJoin us for this great chef demonstration class in which up to three courses of an Italian inspired meal are prepared by our chef in front of you.  The full meal will be enjoyed as the courses are prepared and paired with Italian wines. This class includes a full meal\, all vegetarian friendly\, of pasta for your first course\, followed by a savory entrée course with vegetables and/or salad followed by a dessert course.   Recipes will be discussed during preparation of meal & note taking is encouraged.  In this observation type class students will watch as the instructor makes three different recipes for the evening of fresh foods and each course is consumed by the students.  This is a full coursed dinner with chef instruction and discussion during the evening.  $75.00 per person\, includes 4 course meal with chef demonstration\, class instruction and full dinner meal with wine tasting.
