Each student will be making an individual cheesecake to take home. Assorted flavors and crusts will be available to choose from as well as a sample cheesecake to taste. The chef will prepare a cheesecake alongside the class as part of the class instruction. Students will learn mixing & baking techniques needed to make a great cheesecake. *Individual baking will be done at home. STUDENTS (GLUTEN FREE OPTIONS\, VEGETARIAN FRIENDLY & KID FRIENDLY) \nHands On Class \nEnjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner using simple ingredients with flour\, potato and egg.  During the class the instructor discusses types of pasta sauces and prepares a sauce fresh.  At least two different types of sauces are available for students to choose to top the freshly cooked Gnocchi.  The class ends with cooking each individual student’s fresh Gnocchi to enjoy with a choice of fresh made sauce.  If you happen to be gluten free and miss eating pasta this class is for you too as we provide an optional instruction on making Gluten free Gnocchi’s by request.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class. Finished Tarts may be be baked at home or in class; add an additional 30 minutes to class time if baking in class.  The class will end with a sample of a completed tart served with coffee or beverage as part of the demonstration on finished product. The chef prepares a total of three different soups.  This class is a hands on type of class with chopping\, peeling and sautéing in stations for each different soup.  Note taking is recommended as some of the recipes may vary during class. It uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu. In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies to layer with as well as types of soaking for the cookies. *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan. Customers loved our cheesecakes when our café was open because of their light and fluffy texture. This class will go over the Ricotta Cheesecake recipe originally developed by the Fat Tuscan. Each student will be making an individual cheesecake to take home. Assorted flavors and crusts will be available to choose from as well as a sample cheesecake to taste. The chef will prepare a cheesecake alongside the class as part of the class instruction. Students will learn mixing & baking techniques needed to make a great cheesecake. Individual baking will be done at home. Students learn how to make a cooked Pate au choux pastry dough using a stovetop and then pipe the warm dough onto cookie sheets for baking.  After the pastry cools students will have a choice of different cream fillings to fill their pastry designs as well as warm chocolate to drizzle over the top. The class focuses on piping skills\, cooking the correct consistency for the dough and filling the pastry’s. This class requires some detailed work such as piping and filling warm delicate pastries for designs.  Each student will go home with an assorted mix of pastries so a container is recommended for the finished pastries to be taken home. The recipe we will be using is an original developed at the Fat Tuscan and is perfect for either savory or sweet breads.  Learn to mix\, knead\, rise and shape dough to make an Onion Ricotta Brioche Roll & a Sweet Chocolate Chip Bun.  Also\, learn the ways to form and work with a wet sponge from yeast as well as the proper technique to stuff and form the breads with the assorted fillings. Each student will be handling and making their own bread dough’s from scratch. This class is mainly an observation type class with some chopping and peeling required by the students.  At times\, some recipes may be put into stations with instructions for students to produce the soup in full. Observation of instructor and note taking along with sampling & eating the prepared soups are part of the class.  This class includes a beverage\, cooking instruction\, all supplies\, and groceries as well as recipes of the dishes prepared in class to take home.  Samples of the soups prepared may be eaten at the end of class or taken home to be enjoyed later. $50.00 per person\, includes chef instruction\, all supplies\, materials\, discussions and a full meal of an assortment of Soups.

STUDENTS. \nHands On \nIn this fun interactive cooking class challenge be prepared to bring your competitive nature to the table. Five different couples compete to create\, cook\, prepare and plate a small tasting which will be eaten by the entire class\, all while sampling different wines throughout the evening.  First\, we set up the evening into 5 table stations\, each with a different recipe to prepare.  During the evening the Chef instructor provides assistance and guidance\, but all the cooking & preparations are done by the students.  As each plate is completed it is presented to the entire class.  After which\, students will vote for the best plate of the evening.  The winning couple receives a bottle of wine of their choice & bragging rights.  This class explores learning to follow recipes\, food design\, plating &  presentation.  Most importantly the class emphasizes enjoying the art of cooking together as a team. DESCRIPTION:SUNDAY\, AUGUST 15TH – HERB BREAD & YEAST DOUGH – WORKING WITH BREAD –   10 Students Max.  11:00AM to 2pm –  (Hands-on Class  – Kids Welcome) \nIn this class students will explore making bread from scratch. This class begins with an introduction to yeast and moves to each student learning to mix\, knead\, rise and shape his or her own dough. During the class\, we will be adding in fresh herbs to add flavor into our breads.  As the class proceeds students will gain knowledge in an understanding of yeast\, how to mix bread dough properly\, kneading techniques\, rising bread and shaping different bread dough’s such as baguette’s\, braids and filled breads. At the end of class we will bake your breads in our oven and each student will take home a hot fresh baked bread to enjoy. In this hands-on class we provide all the raw ingredients\, utensils and one-on-one instructions. Each student will be working at his or her own station. There will be a substantial amount of flour used in this class so we recommend you bring an apron. This class is $50.00 per person.  It includes a beverage & light snacks during the class as well as cooking instructions and printed recipes.  *Kids are welcome in this class.

We will have several different sauces as options to top the cooked ravioli plus a cheese stuffing for the center of these delectable treats.  This class is a hands-on class\, so aprons are recommended.  We also include a choice of beverage (or bring your own bottle of wine)\, and a light snack during class.  Cooking class instruction and printed recipes will be available for each student. DESCRIPTION:WEDNESDAY\, AUGUST 4TH – Tiramisu Class; Learn to Create this Classic Italian Dessert – 5:30PM TO  7:30PM – 10 STUDENTS MAX. \nThis class will cover the classic favorite Italian Dessert known as Tiramisu.  It uses layers of sweetened cream including mascarpone\, which is an Italian type of whipped cream specifically for Tiramisu.  In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies to layer with as well as types of soaking for the cookies.  *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan.   ($50.00/per person\, includes class instructions\, ingredients\, tools and equipment as well as printed recipes.  This class will also include a fresh Tiramisu to be taken home and chilled\, please bring a glass square/rectangular baking sheet that can be refrigerated.)
