Cooking Classes are $40 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

Thursday, NOVEMBER 9TH  - Making Ravioli Cooking Class   --   6pm to 8pm -- 20 Students Max. THIS CLASS IS NOW FULL.

Enjoy an evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s.  We will then cook each individuals ravioli’s for their dinner consumption; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages, cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes)  THIS CLASS IS NOW FULL.

FRIDAY, November 10th  – Making Pizza Cooking Class 6pm to 8pm.  15 Students Max.  

Join us for a Friday night of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. Each student will learn to make a dough of their own and then top it with fresh assorted items provided by the Café and then consume their pie at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. (15 student maximum). Includes light beverage refreshments or you may bring your own bottle of wine. (proper ID required) ($40.00/per person includes pizza dinner, cooking class instruction and printed recipes)

Thursday, NOVEMBER 16TH  – Winter Soups & Wine; Squash and Pumpkin Bisques. -  6pm to 8pm  – 20 Students Max.

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create warm hearty bisques. Wine will be paired with each soup presented ( a total of three soups will be prepared and eaten in class served with warm hearty Tuscan Bread.  (some chopping and peeling may be required for this class, but the majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants and entire evening’s dinner dedicated to eating soups and sipping wine.  Recipes of dishes will be available to all students. **includes a dinner of soups served with toasted bread.  ($40.00/per person – includes all ingredients, supply’s, soups, and cooking Class instruction)

Sunday, NOVEMBER 19TH – ALL ABOUT PIES  – 2pm to  4:30pm  -  15 STUDENTS Max. THIS CLASS IS CURRENTLY FULL.

Join us at this Sunday afternoon class before thanksgiving and learn to make PIES!  Each student will make two pie’s from scratch to take home, perfect to share during Thanksgiving or for the Holiday season around the corner.  Students will make butter pie dough from scratch and then fill it with an assortment of fillings to choose from such as Chocolate, lemon, Apple and Pumpkin.   (*Each student needs to bring two GLASS PIE PANS.  The pies will be taken home to be baked at a later date.)  Students will also learn to make Whoopee Pie’s, a nostalgic southern pie cake that no one can resist.  Aprons are recommended as this is a hands-on class.  The whoopee pies will be eaten in class along with coffee and assorted beverages.  ($40.00/per person, includes all groceries, supplies, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *Children are welcome.  THIS CLASS IS CURRENTLY FULL.

Tuesday, NOVEMBER 21stMAKING LASAGNA COOKING CLASS – 6pm to 8pm – 15 person max. sign up. THIS CLASS IS NOW FULL.

In this class students will learn to make a quick sauce from scratch and to build the best gourmet lasagna ever – ‘it’s all about the ingredients!’  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a Lasagna to cook at home that will feed up to 6. All stuffing ingredients will be provided for the students as well as vegetarian and meat options.  This is a perfect class to get ready for Thanksgiving as there is nothing better than having a homemade Lasagna ready to pop in the oven for all that Holiday Company. (This is the Tuesday before the Thanksgiving Holiday).  **Class includes all supplies to create and make lasagna in class to take home for each student, class instruction, light snacks and take home recipes.  $40.00/per person. THIS CLASS IS NOW FULL.

Sunday, NOVEMBER 26th  - BRUNCH & CREPES  Cooking Class – 11am to 2pm – 20 students Max.

Join us for a fun morning of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

Sunday, December 17th – Italian Holiday Breads & Cookies – 1pm to 3pm – 20 students max.

In this cooking class day workshop students will be working with their own dough to create favorite traditional Italian Holiday Breads, Cookies, Tarts and/or Cakes from Italy.  Printed recipes will be given to each student and a discussion on techniques and instructions for each type of recipe will be given in class. (This class is a hands-on class and each student will be handling and making their own dough’s, aprons are recommended.)  Samples of desserts the chef prepares will be eaten in class and each student will be going home with an assortment of items he/she creates in class.  ($40.00/ Per Person includes all supplies, class instruction, light snacks, tastings and recipes to take home.)

Thursday, December 21st  - Tasting will be from 6pm to 8-pm, Show up anytime. 

Come Taste an assortment of Italian Desserts all made in-house by our Chef Gioviti paired with a variety of fine Wines from Opici Winery.  Choose your own Tiramisu Flavor, choose your own Cannoli filling and dip sweet Almond Cantucci Cookies, a favorite Italian holiday tradition,  in sweet wine with an espresso on the side.  We will be offering up to 4 specially selected  wines for you to taste as you enjoy your desserts.  This class is a perfect mixer for friends or family in town and for those of you new to wines looking for some special holiday gifts.  This evening class at the Café is for you to enjoy an relaxing time inside our 100 year old Historic Vidal House decorated for the holidays as well as our brick covered courtyard or touring the historic Thomas Center Gardens afterwards.

SPECIAL HOLIDAY DINNER

Friday, December 22nd  -  4 Course Holiday Dinner & Wine Chef Cooking Class  – 6pm to 9pm – 25 students max. sign up. $50 per person.

The Holiday spirit will be in the air at the Fat Tuscan and in every recipe we make!  Come enjoy an evening of local gourmet food and participate in a cooking class as well to celebrate the holiday season.  We will teach you how to make your own Gnocchi for the Pasta course of the evening and then sit back and enjoy the rest of the dinner for a relaxing candle lit evening featuring the best local foods prepared fresh for you on the evening of the event.  One seating and only 15 couples so your table is yours for the evening.  No rush and no hectic background at the Fat Tuscan, we are all about our guests enjoying an intimate and relaxing evening of good food with good company to celebrate the holidays.  ($50.00/ per person, includes full 4 course dinner, recipes for the gnocchi making portion and a complimentary bottle of wine per table, per couple. * Sangria may be substituted for wine or Espresso at end of meal if no alcohol is desired.)

Saturday, December 30th – Winter Preserves, Candies & Jams.  - 1pm to 3pm – 15 Max. Sign Up.

In this class learn about Salt & Sugar preserving.  We will be reviewing methods and types of traditional preserving as well as making an assortment of Citrus Preserves such as Candied Orange peel, Country Lemons (Preserved Lemons), and assorted Citrus Fruit Jams.  All supplies, groceries and canning jars will be provided as part of the class, but if you have some backyard citrus trees please bring as these are the best types of citrus to preserve; (Local variety’s have the best flavor and are the freshest for flavor).  Light snacks will be served with refreshments during class.  ($40.00 per person, includes class instruction, refreshments and snacks, all supplies, groceries and recipes to take home.)

 

JANUARY  - 2018 SPRING SCHEDULE

Thursday, JANUARY 4TH – HEALTHY COOKING WITH FRESH HERBS  - 6PM TO 9PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

FRIDAY, JANUARY 5TH – PASTA MAKING; MAKING GNOCCHI – 6PM TO 9PM – 20 MAX. STUDENTS (GLUTEN FREE OPTIONS)

Enjoy A Friday evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes Gnocchi dinner.) *May bring your own bottle of wine if desired.

THURSDAY, JANUARY 11TH  - WINTER SOUPS – 6PM TO 9PM – 20 MAX. STUDENTS

This class is All about Soups, so if you are a soup lover it is perfect for you.  With the cold setting in for us, soups make a perfect tasty meal to prepare as well as an healthy option for the new year. In this class we will be making soups from scratch using fresh ingredients and building flavors; Cold and Hot soups will be explored in this series. (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  *Includes light beverages, cooking instruction, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an evening meal of three types of soups. This class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared by our house chef fresh and in front of the class with discussion throughout each course.  The chef will also feature the selected wines in each course as it is paired  with the dishes for the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class is for students who love wine and good food and for students wishing to learn more about wine.  Time: 6:30 to 6:45 seating, Dinner presentation and wines begin at 7pm.

Explore making bread in this cooking class.  Students will learn to make a fresh baguette from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  Bread will be baked in class and each student will go home with a baguette to bake at home that they made in class.  Aprons are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class.

This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.
