Cooking Classes are $40 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

Sunday, MARCH 12th -  Beginning Bread Making 10am to 2pm (Day workshop) *Great for parents & kids. 20 Student Max.

Explore making bread in this cooking class.  Students will learn to make a fresh baguette from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  Bread will be baked in class and each student will go home with a baguette to bake at home that they made in class.  Aprons are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.  *includes light beverages and snacks as well as cooking instructions.  ($40/per person)

Sunday, MARCH 19th  - Cookie Decorating Class (sign up with your child or a friend, perfect as a “Mommy and Me” class.)  1pm – 3pm. 20 Students Max.

Come enjoy an afternoon of decorating sugar cookies.  We will have cookies ready for you to decorate with an assortment of toppings, colors and icing types for you to decorate your cookies.  This class is perfect for kids and parents and will be a fun afternoon of exploring your creative side through food decorating.  *includes light beverages and snacks as well as instructions on decorating through food.  ($40/per person) (kids ages 7 to 15 welcome with a parent -  $15 discount for kids under 12).

Thursday, MARCH 23rd  - Wine Tasting and Chef Dinner Cooking Class – All About Cabernet’s -  6:30pm to 9pm.  20 Max. Students.

This class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared fresh and in front of the class with discussion during using and pairing the selected wines of the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class is for students who love wine and good food and for students wishing to learn more about wine.  Time: 6:30 to 6:45 seating, Dinner presentation and wines begin at 7pm.

Wednesday, MARCH 29th – Italian Cooking With Wine Chef Demonstration Cooking Class  - 6pm to 8pm.  20 Max. Students.

Several courses will be made by the chef instructor all including wine as an ingredient, including, but not limited to an Appetizers, Dressings, Salads, Soups, Main Courses, and Desserts.  Students will consume all food prepared in class so this is a full dinner and chef instruction class in one.  This class is mainly an observation by students of instructor preparing dishes.  Note taking of recipes is encouraged as some recipes are adjusted as the class progresses.  ($40.00/per person, includes recipe discussion, chef demonstration and dinner meal).

Sunday, April 2nd  - Brunch & Crepes Cooking Class – 10am to 12pm – 15 students Max. **THIS CLASS IS NOW FULL

Join us for a fun morning of making crepes and enjoying a full brunch served with mimosa’s and Bellini’s.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  The class consists of some observation and some hands-on to learn technique. This class is scheduled for the same weekend as the Santa Fe Spring Arts festival, which is right outside our front door.  Students are encouraged to enjoy the morning cooking and eating with us and then walk the beautiful Spring Arts Festival after.  *Parking in our parking lot will be available exclusively to our students, but please note that 1st street will be closed to all traffic. Wednesday, April 5th  - Italian Vegetarian (with Vegan options) Cooking Class – 6pm to 8pm  - 20 Students Max.

Join us for this great chef demonstration class in which up to three courses of an Italian inspired meal will be prepared and eaten in class for all students to enjoy.  This is a perfect date night dinner to attend and includes a full meal..all vegetarian…(with Vegan options as well).  Recipes will be discussed during preparation of meal and note taking is encouraged.  ($40.00/per person, includes class instruction and full dinner meal with beverages)

*This Class is an observation type class, where students will watch as the instructor makes three different recipes for the evening of fresh foods and each course is consumed by the students.  This is a full coursed dinner with chef instruction and discussion during the evening.  Note taking is encouraged as recipes will be adjusted and discussed to accommodate for vegetarian and or vegan dishes. 

Sunday, April 9th   - Cheesecake Making Cooking Class  - 1pm to 3pm  - 15 Students Max.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) $40.00/per person, includes all ingredients to prepare an individual cheesecake as well as take home recipes for each student. Light snacks and refreshments will be served.

THURSDAY, APRIL 13TH – Making Gnocchi Cooking Class 6pm to 8pm. 20 Students Max. (*Gluten Free options)

Enjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes Gnocchi dinner.)

FRIDAY, APRIL 14TH  – Making Pizza Cooking Class 6pm to 8pm.  15 Students Max.  

Join us for a Friday night of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. Each student will learn to make a dough of their own and then top it with fresh assorted items provided by the Café and then consume their pie at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. (15 student maximum). Includes light beverage refreshments or you may bring your own bottle of wine. (proper ID required) ($40.00/per person includes pizza dinner, cooking class instruction and printed recipes)

Saturday, April 22nd  - Fresh Herbs and Healthy Fresh Italian Recipes Cooking Class   - 12 to 3pm.  20 Students Max.

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged.  ($40.00/per person, includes all food prepared in class, and beverages.)

Saturday, May 20th  - All About Pickling and Spices Cooking Class  - 11 to 2pm.  15 Students Max.

In this class students will be provided with all materials and ingredients to pickle their own vegetables.  A discussion on the process of pickling and the different types of ways to preserve fresh vegetables and fruits in your kitchen will be discussed.  Some pre-prepared pickled condiments and vegetables will be available in class for tasting.  This will be a hands on class in which dicing, slicing and pickling will be done by each student.  ($40.00/per person, includes all materials as well as take home containers as well as some light snacks and beverages).
 

Thursday, MAY 25th – A night of Pasta Cooking Class.  6pm to 8pm. 20 Students Max. THIS CLASS IS NOW FULL

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. Students will be making their own pasta from scratch and then consuming their results at the end of class, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations.  **includes dinner of fresh made pasta with a choice of sauce and toasted herb Tuscan bread. ($40.00/per person includes dinner, cooking class instruction and printed recipes) THIS CLASS IS NOW FULL.

Saturday, May 27th  - Bread Making Workshop  - 11am to 3pm.  15 Student Max.

This workshop focuses on Bread Making and the class will work with other yeast breads as well as sour dough’s to discuss the art of making bread from scratch.  Learn to create bread from scratch and work with Bread Dough’s as well as fresh Yeast dough’s.  This class will explore using both commercial yeast and how to make fresh sour dough starters to make bread.  Ingredients will be provided.  Shaping and forming bread will be explored in this class.  Please bring a Cookie sheet or cooking pan to class with you as well as a kitchen towel.  Aprons are recommended.  Each student will be working with his/her own dough throughout class.  ($40.00/per person and includes class instruction, all ingredients, take home breads to bake at a later date and some light refreshments.) *Children ages 8 and up may attend with a parent.

Saturday JUNE 3RD – Brunch & Biscotti Cooking Class   -  11am to 2pm – 20 students Max. THIS CLASS IS NOW FULL

Come enjoy Brunch served in our courtyard AND learn to make Biscotti, (a classic Italian Cookie).  Starting at 11am brunch buffet with everything from scones, biscuits and to eggs to mini cucumber sandwiches will be served along with assorted hot tea, cold tea’s & Mimosa’s/Sangria.  Beginning at 12:30 a class on making Homemade Biscotti will begin. This will be a hands-on class in which each student will learn to make biscotti dough from scratch. The instructor will prepare a biscotti batch from start to finish in class for consumption by students. *Each student will be going home with a completed ready-to-bake dough for eating at a later date, so please bring a Container to transport your raw dough.  $40/Per person - includes brunch, all supplies and cooking class instruction. - 11am to 3pm (20 student max.) Friday, JUNE 9TH – A NIGHT OF RAVIOLI MAKING – 15 STUDENT MAX.

Enjoy a Friday evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s.  We will then cook each individuals ravioli’s for their dinner consumption; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages, cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes)

Saturday, June 10th – COOKING AT THE BEACH CHEF DINNER COOKING CLASS – 15 STUDENT MAX.  - 5pm to 8pm   -  $65.00 per person, includes full dinner courses and cooking class instruction. **Travel to the destination required.

Students are invited to an evening cooking in the salty breezes of our East Coast along St. Augustine Beach.  From the 2nd story veranda of the Villa Del Sole Beach House in old St. Augustine Crescent Beach our large tables will be set for a night of cooking good food, good company and good wine.  The Chef will work with the students to prepare Italian inspired dishes using the local flavors & seafood of the coastal area.  This multi-course dinner will be conducted in a relaxed environment for all to enjoy and consumed family style as the summer salt air plays a background to our evening on the veranda of the home with a view of the ocean.     $65.00/per person.  Address will be provided upon signup/registration.  Class will consist of 3 to 4 courses.

We encourage students to make a day of it and arrive early to enjoy a day spent strolling in Downtown St. Augustine, the oldest and most picturesque city in America before class begins.

Come celebrate the opening of summer with us at this special Cooking class on wine tasting and learning to make yummy appetizers to pair.  Allyson from Opici Winery will be here opening up her summer suggestions of wines from Crisp whites to rose’s to some refreshing reds perfect for the hot weather coming up.  This class will also have a hands-on portion cooking instruction in which 4 groups of students each will make and present an appetizer for the class to share with each wine tasted.  Recipes and Chef Instruction will be conducted one-on-one with each group throughout the class and a full description of each wine and flavors will be given during class.  (This class includes all supplies, groceries, wines, chef instruction and a full tasting to make up a dinner for each student.  $65.00/per person)

**Special Class – Wine Tasting & Dinner Cooking Class $65.00/per person

Friday, JULY 21st  - Wine Tasting & Cooking Class – Appetizers and White Wines -  6:30pm to 9pm.  20 Max. Students.

This class is all about wine, fun, cooking and samplings.  In this hands-on Class students will explore multiple types of white wines paired with an appetizer that each student prepared with a group during the duration of the class.  There will be 4 groups of 4/5 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will also prepare the first appetizer of our Classic House made Bruschetta for all the students upon arriving.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.  The wines will be provided by Opici Winery and our favorite fun representative from Opici will be on hand to address and describe each wine for the class.  This is a great date night or fun night out with friends to socialize while eating fresh, great food and drinking even better wines.  Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person.

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with dipping oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.
