We have updated our Format Structure for our Cooking Classes here at the Fat Tuscan.  Our Fall Schedule of interactive, in-house cooking classes will now focus on smaller class sizes.  With the enhanced smaller sizes our instruction will be able to be given in much more of an intimate environment for optimum learning opportunities for all our participants.  This new format will also allow for students to work at individual work stations with personal materials and supplies provided at each station.  We feel this is the best way to not only upgrade our Cooking Class Experience but also allows for us to maintain a clean and safe environment for all attending.  All Classes will now accomodate for each student to use seperate stations with individual work spaces and plenty of space to work on thier individual projects.  Our Class sizes have been reduced to a maximum of 10 students at a time.  The Class Schedule for the Fall will be updated every two months with new classes and dates so that we can continue to monitor the situation with the Corona Virus and State Health Mandates regarding food service establishments.  (Please Note:  - Anyone who signed up for a class before July 2020 that was canceled or you sent notice to us for non-attendance due to the Pandemic Crisis during the Quarantine has a Class Credit in our system and may attend another class or a rescheduled class in the future.  *Your credit will appear under the email address which purchased the class, call or email us to apply your credit. - We are sorry but no refunds are available at this time. Credits will be good until Dec. 2021)

Cooking Classes range from $50 to $75 per person per class unless otherwise stated and always include food tastings and snacks throughout the duration of every class.  Most classes also include a beverage of choice, Iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date.  Please see the details for each class below to plan accordingly. WEDNESDAY, JANUARY 8TH – PASTA MAKING; MAKING GNOCCHI – 6PM TO 9PM – 20 MAX. STUDENTS (GLUTEN FREE OPTIONS, VEGETARIAN FRIENDLY & KID FRIENDLY) *This class is now sold out. 

Enjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  There will be at least two different types of sauces to top the Gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class. *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes Gnocchi dinner.) *may bring your own bottle of wine if desired. *This class is now full.

This class is All about Soups, so if you are a soup lover it is perfect for you.  With the cold setting in for us, soups make a perfect tasty meal to prepare as well as an healthy option for the new year. In this class we will be making soups from scratch using fresh ingredients and building flavors; stocks and soup flavors will be explored in this series. (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  *Includes light beverages, cooking instruction, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an evening meal of three types of soups. *May bring your own bottle of wine to share. THURSDAY, JANUARY 16TH – HEALTHY COOKING WITH FRESH HERBS  - 5:30PM TO 8PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

This Chef led Cooking Class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared by our house chef fresh and in front of the class with discussion throughout each course.  The chef will also feature the selected wines in each course as it is paired with the dishes for the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. MONDAY, JANUARY 20TH - PASTRIES, CREAM PUFFS & ÉCLAIRS CLASS – 5PM TO 8PM -  16 STUDENTS MAX.  *This Class is now Full.

Join us at this evening class exploring all things Pastries!  Learn to pipe, make and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, chocolate Mousse, and Vanilla whipped cream as well as the recipe for creating Cream Puffs and Éclairs.  This will be a hands-on class with some detailed work required such as piping and filling warm delicate pastries.  Each student will go home with an assorted mix of pastries so a container is recommended for the finished pastries to be taken home. WEDNESDAY, JANUARY 22ND  HERBS, HERBS, HERBS – COOKING WITH FRESH HERBS  - 11AM TO 2PM – 12 MAX. STUDENTS

This class will include an excursion to The Fat Tuscan's Herb Garden at Grow Hub, followed by picking and harvesting a variety of fresh herbs and then a cooking class at the Café of different recipes centered around using the herbs we harvest.  This is a perfect class for beginner cooks who don’t know their way around using fresh herbs in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes using them.   Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will include a trip to the Nonprofit farm Grow Hub (https://www.facebook.com/GROWHUBGNV/ )with a discussion on growing herbs in our climate as well.  This will be an interactive and observation class with note taking encouraged for the recipes we create.  All food prepared in class will be consumed or taken home by students.  At least 3 different types of recipes will be prepared in class.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages. Enjoy an afternoon with Michelle, Chef and Owner of the Fat Tuscan, & Guest Chef Ashley Rella, Program Director from Working Food, for a class on how to preserve the fresh abundant Citrus currently ripening in our area.  December and January are the months that this wonder fruit typically matures and our trees are all hanging full and low with sweet tangy fruit. And so, makes perfect timing to hold our Citrus Preserves Class. If you have some trees we would love you to bring some to class to share as they have the best flavor.  In this class learn about Salt & Sugar preserving.  We will be reviewing methods and types of traditional preserving as well as making an assortment of Citrus Preserves such as Candied Orange peel, Country Lemons (Preserved Lemons), and Lemon Curd.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages, supplies, canning jars, cooking class instruction, ingredients and printed recipes for students to take home.   FEBRUARY 2020

WEDNESDAY, FEBRUARY 5TH – Tiramisu Class; Learn to Create this Classic Italian Dessert – 11AM TO 1PM – 15 STUDENTS MAX. *This class is now sold out. 

This class will cover the classic favorite Italian Dessert known as Tiramisu.  It uses layers of sweetened cream including mascarpone, which is an Italian type of whipped cream specifically for Tiramisu.  In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies to layer with as well as types of soaking for the cookies.  *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan.   ($40.00/per person, includes class instructions, ingredients, tools and equipment as well as printed recipes.  This class will also include a fresh Tiramisu to be taken home and chilled, please bring a glass square/rectangular baking sheet that can be refrigerated.) *THIS CLASS IS NOW FULL. 

THURSDAY, FEBRUARY 6TH – A NIGHT OF PASTA & SAUCE - COOKING CLASS  - 6PM TO 9PM – 18 MAX. STUDENTS SIGN UP. (VEGETARIAN FRIENDLY)

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. Students will be making their own pasta from scratch and then learning knead and roll it out and form them into a variety of shapes.  During class the instructor will be making a Fresh Marinara Sauce (Vegetarian) and a Bolognese Sauce (a hearty meat sauce) and provide instruction on the process for making each sauce.  All students will be consuming their results at the end of class with their choice of the prepared sauces, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. *may bring your own bottle of wine. **includes dinner of fresh made pasta with a choice of sauce. SUNDAY, FEBRUARY 9TH  - BRUNCH & CREPES Cooking Class -  11am to 2pm - 20 students max.   *THIS CLASS IS NOW SOLD OUT. 

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. *kids welcome.  ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)  *This class is now full.

Come out and enjoy a fun night learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta.  This class will also include a demonstration of the instructor teaching and making a fresh pesto sauce & a variety of Creamy sauces during the length of the class.  Then cook, eat and dine on your fresh pasta you made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta where students will learn to make either a tomato, spinach or butternut squash flavored pasta from scratch. Explore working with wet yeast dough’s in this class.  Each student will work with two types of dough, both a savory & sweet bread Dough.  Students will learn how to combine ingredients, knead and rise yeast dough’s to create a savory dough and a sweet nut & fruit bread.  This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Join us for an evening of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person. This class will explore working with cold butter to create soft tart pie dough.  Assorted jam fillings will be provided for students to use to fill their tarts and then instructions on forming a lattice top for baking.  All Ingredients will be provided. This class is perfect for beginners. Learn to make perfect pie dough and then use it to create a fresh fruit pastry. Each student will be working with his/her own dough throughout class. Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring an 8 or  9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create several types of soups from creamy bisques to warm hearty stews to some light summer soups.  A small Wine tasting will be paired with each soup presented as a compliment to the soups.  A total of three soups will be prepared and eaten in class served with our toasted Tuscan Bread.  There may be some chopping and peeling and or working at group stations to create soups for this class as well as a majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants more recipes and suggestions for creating soups at home.  Recipes of dishes will be available to all students. In this cooking class students will learn to create an Italian favorite traditional Cookie known as Biscotti.  Each student will mix and measure their own batch of dough with various toppings and ingredients available to choose from for flavorings such as almonds, walnuts, dried fruits such as cherries and cranberries as well as assorted types of chocolate morsels, etc.  Students may choose to split their dough’s to make several different types to have an assortment to take home and enjoy.  This is perfect class with the holiday’s right around the corner and the fact that biscotti’s make a great cookie exchange cookie.   Printed recipes will be given to each student and a discussion on techniques and instruction demonstration for making the dough from scratch will be given in class. Mother's Day High Tea Brunch and Cooking Class - Come enjoy a High Tea Brunch served in our courtyard with mom.  Starting at 11am we will be serving Brunch Boxes to include from scones and biscuits to mini cucumber sandwiches and other baked items.  Included of course with assorted hot teas, complimentary mimosa's and sangria's for you and mom to enjoy - served individually.  Then beginning at 12:30 we will have a demonstration cooking class and presentation for Making Homemade Biscotti.  The instructor will prepare a biscotti batch from start to finish in class for consumption by students.  At the end of class warm biscotti will be served with hot tea and/or coffee.  ($50.00/Per person, includes full brunch, beverages, class instruction & recipes included.) Thursday,  MAY 14TH – All About Pickling and Spices Cooking Class  - 11 to 2pm.  10 Students Max. (Currently have 5 open seats)

In this class the instructor will give a presentation on spices and the art of pickling to add flavor and preserve ingredients.  Then each student will be provided with all materials and ingredients to pickle a variety of their own vegetables to take home.  A discussion on the process of pickling and the different types of ways to preserve fresh vegetables and fruits in your kitchen will be discussed.  Some pre-prepared pickled condiments and vegetables will be available in class for tasting.  This will be a hands on class in which dicing, slicing and pickling will be done by each student.  (*Hands On and some Observation type cooking class.  $40.00/per person, includes all materials, chef demonstration, printed recipes as well as take home containers. AUGUST 2020

MONDAY, AUGUST 10TH - BEGINNING BREADS (FRENCH BREAD BASICS, BRIOCHE & BREAD DESIGN) – 5:30 TO 8:00 PM – 10 MAX. STUDENTS

Explore making bread from scratch in this cooking class.  Students will learn to work with yeast and how to make a basic yeast dough from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed as well as yeast basics and shaping of bread.  A basic baguette shape and braid shape will be taught as well as a filled Swirl bread.  Brioche will be the 2nd part of the class in which we learn the basics for this sweet yeast bread and shaping and baking for these recipes.  All Bread will be offered to be baked in class and each student will go home with a baguette, a filled shaped bread of choice and Brioche Bread. Baking times may extend the class times.  Aprons will be provided and are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.    ($50.00 per person, includes light beverages, snacks, supplies, all ingredients, Chef lead cooking instruction, recipes and each students take-home finished product from the class.  This is a hands-on type of class.) 

SATURDAY, AUGUST 15TH  - ALL ABOUT PIES - MAKING PIE’S WORKSHOP  -  2PM TO 5PM  - 10 MAX. STUDENTS 

Explore your inner baker at this Saturday afternoon class learning to make Pies from scratch.  Students will begin by learning to make the perfect Pie Dough, learning techniques and tips to avoid problems and have success working with butter crusts.  Each student will make two different pie crusts from butter doughs from scratch and learn to roll it and fill pie pans for baking. Lattice work will also be taught as part of Pie Design for the class.  An assortment of fillings will be available to fill the pie with some fillings being prepared in class as part of the instruction. (Please Bring (each student) TWO (2) GLASS or CERAMIC PIE PANS and a Rolling Pan from home.) The pies can be baked here or taken home to be baked at a later time.  Aprons will be provided as this is a hands-on class.  The instructor will have several finished pies as examples to be eaten in class along with coffee and assorted beverages for a tasting portion of the class.  ($50.00 per person, includes all groceries, supplies, class instruction, printed recipes and students take-home finished products from the class.) *Children are welcome.  

FRIDAY, AUGUST 28th - MAKING FLAVORED PASTA’S & CLASSIC SAUCES – 10 Max.  STUDENTS - 6PM TO 8:30PM.  THIS CLASS IS NOW FULL 

Come out and enjoy a fun evening learning to make fresh pastas from scratch with your choice of flavoring for your pasta such as tomato, spinach, or pesto pasta.  This class will also include a demonstration of the instructor teaching and making two different fresh sauces from scratch during the class.  In this class students will prepare a fresh egg pasta from scratch, cook and then dine on their fresh pasta made with a choice of the sauces made during the class.  This class explores pasta making and using flavorings to add color and art into pasta making.  (*plain pasta is also available if no flavoring is desired).  An apron is encouraged for this class as each student will be making their own pasta for the evening using flour and eggs.  *may bring your own bottle of wine. *kids welcome ** includes a full dinner of freshly made flavored pasta with a choice of fresh sauce made in class.  ($50.00/per person includes dinner, cooking class instruction and printed recipes.)  This is a hands-on type of class.  THIS CLASS IS NOW FULL

THURSDAY, SEPT. 10th – SOUPS & WINE COOKING CLASS -  6pm to 8pm  – 10 Students Max. 

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create 3 different types of soups from creamy bisques to warm hearty stews to some light summer soups.  A small Wine tasting will be paired with each soup presented as a compliment to the soups.  A total of three soups will be prepared and eaten in class served with our toasted Tuscan Bread.  This class will consist of some chopping and peeling and/or working at group stations to create the different soups for this class.  Some of the class will also be observation as the instructor finishes the soups and lectures on how to properly season and finish before serving.  Note taking and sampling/eating all prepared dishes will be a main part of this class from students.  This class is perfect for the person who loves soups and wants more recipes and suggestions for creating soups at home.  Recipes of dishes will be available to all students. SUNDAY, SEPT. 6th – CHEESECAKE MAKING COOKING CLASS – 11AM TO 1PM – 10 students max.  *This class is now full.  

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome) (*Individual baking will be done at home.  *Students need to bring an 8 or  9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) ($50.00/per person, includes all ingredients to prepare an individual cheesecake as well as take home recipes for each student. There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  In these fun and interactive class students will learn to make fresh ravioli from an egg and flour pasta dough from scratch.  The class will include instruction and demonstration on how to roll out the dough and form ravioli stuffed with an assortment of cheeses. At the end of the class, the done ravioli will be cooked for everyone for their dinner as part of the class.  We will make several sauce options as the available topping for your ravioli’s, both vegetarian.  This class is a hands-on class and we will be working with flour, so aprons are recommended.  The class includes a beverage, or you may bring your own bottle of wine (ID Required). SUNDAY, OCTOBER 4TH – HEALTHY COOKING WITH FRESH HERBS - 3:00PM TO 6PM  - 10 MAX. STUDENTS - This class is full.

This class is perfect for beginner cooks who do not know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and sampled in class.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($50.00/per person, includes class instruction, all supplies and materials, class discussion, samples of all food prepared in class, and a beverage.)    ***This class is now full. 

THURSDAY, OCTOBER 8TH - WINTER SOUPS – 5:30PM TO 7:30PM – 10 MAX. STUDENTS  

This class is All about Soups, so if you are a soup lover it is perfect for you.  With fall right around the corner and our abundant fall vegetables coming out in Florida, it is perfect opportunity to explore soup and soup making.  Soups make a perfect tasty meal to prepare as well as an healthy option.  In this class we will be making soups from scratch using fresh local market produce & ingredients, building flavors such as stocks and hard squash soup flavors. This class is mainly an observation type class with some chopping and peeling required by the students.  At times, some recipes may be put into stations with instructions for students to produce the soup in full. Observation of instructor and note taking along with sampling & eating the prepared soups are part of the class.  This class includes a beverage, cooking instruction, all supplies, and groceries as well as recipes of the dishes prepared in class to take home.  Samples of the soups prepared may be eaten at the end of class or taken home to be enjoyed later. CHEF BOOTCAMP - 3 DAY ALL DAY COOKING CAMP FOR ADULTS

OCTOBER 15TH, 16TH & 17TH --  9AM TO 5PM DAILY - 5 STUDENTS MAX.  This camp will be an intensive all day cooking experince for the person who loves to cook and would like more in-depth experience with recipes, ingredients and chef utensils. COOKING IN TUSCANY - EUROPEAN COOKING CLASS & TOUR

This amazing Cooking Class will be a wonderful week long stay in the heart of Tuscany Italy staying in the middle of the olive groves and countryside.  Each couple will be located at a small Bnb which once was an old grain mill and with Cooking Classes taking place each night at the home of an traditional Italian family.  The Cooking Class Vacation includes 8 night stay in a B&B, transportation, breakfast, Excursion Lunches & Cooking Class Dinners.  There will be 6 nights of cooking class instruction, 6 days of excursions to small little medieval towns amongst the hills of Tuscany and a full time chef and interpreter during your week stay.  The classes and your accommodations will take place in a small village about one hour from Florence Italy near Arezzo.

In this cooking class day workshop students will be working with Brioche Dough.  This is an original recipe dough that the café has developed to make both savory rolls and sweet dessert breads.  Each student will learn to make Onion Ricotta Brioche Rolls & Sweet Chocolate Chip Buns.  Please bring two Cookie Sheets/Baking Sheets to class.  We will learn the ways to form, make a wet sponge from yeast and stuff them and form them with assorted fillings. A rolling pin is recommended as well for this class, but one can also be provided for you if needed.  Printed recipes will be given to each student and a discussion on techniques and instructions for the dough and forming the dough will be given.  This class is a hands-on class where each student will be handling and making their own bread doughs from scratch.  Aprons are recommended.  Samples of breads will be eaten in class.  Please bring a sheet pan to rise your breads on and/or for baking.  **Kids welcome.  ($50.00/ Per Person includes all supplies, class instruction, light snacks, tastings and recipes to take home.)

THURSDAY, NOVEMBER 5TH  - Making Herb Focaccia Bread – 5:30pm to 7:30pm  - 10 max. Students

Learn to make your own bread.  In this course, we will show you how to make bread from scratch and work with Yeast to form a bread dough.  Each student will be working with his/her own dough throughout the class. Understanding yeast and rising times will be discussed in this class as well.  Fresh herbs will also be provided if desired for flavoring each individual’s bread if desired.  The class will cover all the basics for forming and baking fresh focaccia bread.  At the end of class each student’s bread will be baked for them and they will return home with bread to consume later.  Samples of the bread will also be shared as the instructor will create a Focaccia as a tester for the class.  ($50.00 per person includes all supplies, ingredients, class instructions, samples and recipes will be provided to take home.  Each student will be going home with hot fresh baked bread to enjoy. *Please bring a sheet pan for baking and forming the bread.)

SUNDAY, NOVEMBER 15TH – Making Biscotti Cookie’s – 3pm to 6pm  - 10 Max. Students

In this cooking class students will learn to create an Italian favorite traditional Cookie known as Biscotti.  Each student will mix and measure their own batch of dough with various toppings and ingredients available to choose from for flavorings such as almonds, walnuts, dried fruits such as cherries and cranberries as well as assorted types of chocolate morsels, etc.  Students may choose to split their dough’s to make several different types to have an assortment to take home and enjoy.  This is perfect class with the holiday’s right around the corner and the fact that biscotti’s make a great cookie exchange cookie.   Printed recipes will be given to each student and a discussion on techniques and instruction demonstration for making the dough from scratch will be given in class. This class is a hands-on class and each student will be handling and making their own dough’s.  It is recommended that each student have an apron as well as a container to take home the cookie’s they make in class.  Samples of desserts will be eaten in class as the demonstration portion.  (*Hands on type class - $50.00/per person, includes all ingredients, supplies, class instruction and printed recipes for each student. Light snacks and refreshments will be served.)  

THURSDAY, NOVEMBER 19TH– PASTA MAKING; MAKING RAVIOLI – 6PM TO 9PM – 10 MAX. STUDENTS (VEGETARIAN FRIENDLY & KID FRIENDLY) 

Enjoy an evening making fresh ravioli from scratch & then eat them all yourself as dinner! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  In these fun and interactive class students will learn to make fresh ravioli from an egg and flour pasta dough from scratch.  The class will include instruction and demonstration on how to roll out the dough and form ravioli stuffed with an assortment of cheeses. At the end of the class, the done ravioli will be cooked for everyone for their dinner as part of the class.  We will make several sauce options as the available topping for your ravioli’s, both vegetarian.  This class is a hands-on class and we will be working with flour, so aprons are recommended.  The class includes a beverage, or you may bring your own bottle of wine (ID Required). This is a great class for a date night or a fun evening out.  Cooking class instruction from our chef and printed recipes are part of every class.  ($50.00/per person includes instruction, all supplies, all materials, and a full ravioli dinner for each student.  Bread with oil will also be served during this class. This is a hands-on type of class perfect for all levels including children.) 

SUNDAY, NOVEMBER 22ND – MAKING LASAGNA COOKING CLASS – 2PM to 5PM – 10 Students Max.

Join us on the Sunday afternoon before Thanksgiving and make a gourmet Lasagna to serve or take to your Thanksgiving Holiday with family.  There is nothing like having a ready to serve Lasagna in your pantry to serve to guests.  In this class students will learn to make two different sauces from scratch, a marinara & a white Cream Sauce Bechamel.  These sauces will then be used to build the best gourmet lasagna ever – ‘it’s all about the ingredients!’  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a Lasagna to cook at home that will feed up to 6. All stuffing ingredients will be provided for the students as well as vegetarian and meat options.  This is a perfect class to get ready for Thanksgiving as there is nothing better than having a homemade Lasagna ready to pop in the oven for all that Holiday Company.  *Please Bring a Glass/Ceramic 3 or 4 quart rectangular Lasagna Baking Dish **Aprons are recommended. DECEMBER 2020

WEDNESDAY, DECEMBER 9TH – PASTA, PESTO & CREAM SAUCES – 6PM TO 8PM -   10 MAX. STUDENTS

Come out and enjoy a fun evening learning to make fresh pastas from scratch with your choice of flavoring for your pasta.  Perfect class to attend for date night or with a friend.  This class will include a demonstration of the instructor teaching & making a fresh pesto sauce & a variety of Creamy sauces during the length of the class.  Then we cook & let you dine on your fresh pasta you made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta where students will learn to make either a tomato, spinach, or butternut squash flavored pasta from scratch. (plain is also taught if no flavoring is desired).  An apron is encouraged for this class as each student will be making their own pasta for the evening using flour and eggs.  *may bring your own bottle of wine.  ** includes a full dinner of fresh made flavored pasta with a choice of fresh sauce made in class. All students will be consuming their results at the end of class with their choice of the prepared sauces, so come prepared to eat.  ($50.00/per person includes all ingredients, Dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.) MONDAY, DECEMBER 14TH – ALL ABOUT PIES  – 5:30pm TO  7:30pm  -  10 Students Max.

Join us at this and learn to make PIES!  Each student will make two pie doughs from scratch. One dough will be taken home to use later and one pie dough will be used in class for the student to make one full pie to bake at home later.  This is a perfect class to take for learning to make pies for the upcoming holiday season. Students will make butter pie dough from scratch and then fill it with an assortment of fillings to choose from such as Chocolate, lemon, Apple, and Pumpkin.   (*Each student needs to bring one 8” or 9” inch GLASS PIE PANS & a Cookie Sheet to transport Hot Pie’s home. - Pies can be taken home to be baked later or in class which will take a minimum of 45 minutes from end of class.)  Aprons are recommended as this is a hands-on class and you will be working with flour.  (Hands on class - $50.00/per person, includes all groceries, supplies, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *Children are welcome. 

SUNDAY, DECEMBER 20TH – Italian Holiday Breads – 3pm 6pm – 10 Students Max.

In this cooking class day workshop students will be working with several types of yeast dough recipes to create and shape traditional Italian Holiday Breads.  Each student will be working with their own dough at individual stations.  An assortment of fillings and toppings will be available for students to choose from to put into their breads. Printed recipes will be given to each student and a discussion on techniques and instructions for the dough and forming the dough will be given.  This class is a hands-on class where each student will be handling and making their own bread dough’s from scratch.  Aprons are recommended.  Samples of desserts will be eaten in class.  Each student will be going home with a bread to bake at home.  *options to bake at class will be given but requires an additional 30/45 min. time frame to bake.  Please bring a sheet pan to rise your breads on and/or for baking.  **Kids welcome.  ($50.00/ Per Person includes all supplies, class instruction, light snacks, tastings and recipes to take home.)

MONDAY, DECEMBER 21ST - PASTRIES, CREAM PUFFS & ÉCLAIRS CLASS – 5PM TO 8PM -  10 STUDENTS MAX. 

Join us at this evening class exploring all things Pastries!  Learn to pipe, make, and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, chocolate Mousse, and Vanilla whipped cream as well as the recipe for creating Cream Puffs and Éclairs.  This will be a hands-on class with some detailed work required such as piping and filling warm delicate pastries.  Each student will go home with an assorted mix of pastries, so a container is recommended for the finished pastries to be taken home. Aprons are recommended as this is a hands-on class and chocolate may be used.  (Hands on class - $50.00/per person, includes all groceries, supplies, tools, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.)

SUNDAY, DECEMBER 27TH - BRUNCH & CREPES Cooking Class -  11am to 2pm - 10 students max. 

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. *kids welcome.  ($50.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up. *Gift Certificates good for one year from purchase date, afterwhich must be updated yearly before exp. date or they become voided/expired.

Gift Certificates can be applied to all classes above unless specified.
