Cooking Classes are $40 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

JANUARY  - 2018 SPRING SCHEDULE

Thursday, JANUARY 4TH – HEALTHY COOKING WITH FRESH HERBS  - 6PM TO 9PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

This class is All about Soups, so if you are a soup lover it is perfect for you.  With the cold setting in for us, soups make a perfect tasty meal to prepare as well as an healthy option for the new year. In this class we will be making soups from scratch using fresh ingredients and building flavors; Cold and Hot soups will be explored in this series. (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  *Includes light beverages, cooking instruction, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an evening meal of three types of soups. This class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared by our house chef fresh and in front of the class with discussion throughout each course.  The chef will also feature the selected wines in each course as it is paired  with the dishes for the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person.

This event is perfect for an after dinner dessert stop with your valentine or loved one on the Friday night after Valentines.  We will be pairing our dessert flights with an assortment of wines and offer an espresso on the side as well.  The dessert flights will be an assortment of fresh pies all made in-house by our Chef Gioviti paired with a variety of fine Wines .  We will be offering up to 4 specially selected wines for you to taste as you enjoy the pie flight desserts.  This class is perfect for friends or family as well and for those of you who love dessert.  This evening class will be set up inside the café’s 100 year old Historic Vidal House as well as our brick covered courtyard with Lion fountain, so pick your spot and enjoy the night.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) Come out and enjoy a fun Friday Night learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta.  This class will also include a demonstration of the instructor teaching and making a fresh pesto sauce & a variety of Creamy sauces during the length  of the class.  Then cook, eat and dine on your fresh pasta you made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta where students will learn to make either a tomato, spinach or butternut squash flavored pasta from scratch. Explore working with wet yeast dough’s in this class.  Each student will work with two types of dough, both a savory & sweet bread Dough.  Students will learn how to combine ingredients, knead and rise yeast doughs to create a flat bread savory dough and a sweet nut & fruit bread.  This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Enjoy a relaxing evening inside the beautifully restored historic Vidal House learning about cooking & Pairing a variety of different types of Italian Wines.  This class will pair each wine in a coursed dinner setting as students watch the chef prepare the meal in front of them throughout the night.  Chef and Owner, Michelle Gioviti-Reeves from the Fat Tuscan, will be discussing and pouring samples of the wines to go with each tasting of this coursed meal.  This class is for students interested in learning about wines, tasting wines and enjoying gourmet food prepared fresh while learning how to pair each wine with select courses to make a dining experience for future dinner parties and guests.

SUNDAY MARCH 25TH   - BEACH EXCURSION COOKING CLASS - THIS CLASS IS NOW SOLD OUT

COOKING AT THE BEACH CHEF DINNER COOKING CLASS – 15 STUDENT MAX.  - 5pm to 8pm   -  $65.00 per person, includes full dinner courses and cooking class instruction. **Travel to the destination required.

Students are invited to an evening cooking in the salty breezes of our East Coast along St. Augustine Beach.  From the 2nd story veranda of the Villa Del Sole Beach House in old St. Augustine Crescent Beach our large tables will be set for a night of cooking good food, good company and good wine.  The Chef will work with the students to prepare Italian inspired dishes using the local flavors & seafood of the coastal area.  This multi-course dinner will be conducted in a relaxed environment for all to enjoy and consumed family style as the summer salt air plays a background to our evening on the veranda of the home with a view of the ocean.     $65.00/per person.  Address will be provided upon signup/registration.  Class will consist of 3 to 4 courses.

Do you love your dog? Do you love Brunch?  Do you want to hang with your best friend making yummy treats for him/her?  This class is for you!!  Bring that pup to our patio with you for a class on making Dog Biscuits.  We will provide you with fresh wholesome dog biscuit dough from fresh ingredients with different flavors and you get to cut out and make assorted biscuits for your best friend to take home, (We won’t tell if some go missing along the way either.) Come enjoy a Sunday Brunch alongside your best pooch with us on our patio eating some tasty brunch foods, (don’t’ worry there will be lots of fresh foods for humans to eat too!)  We will supply all the ingredients for flavors such as Peanut butter Bacon, Chicken and Beef flavored dog biscuits for you to choose from and then each student will roll out, cut dog biscuit shapes and we will bake them for you while you eat an assortment of brunch items.  Each student will go home with around 10 – 15 biscuits for their pet with recipes of all the flavors included.  (Dogs must be on a leash and outside seating only with your pet is allowed.  Inside seating available but only for students without pets.)  ($40.00/ per person, includes a full brunch buffet with refreshments including mimosa’s and Sangria, cooking class recipes for Dog Biscuits to take home as well as fresh baked Dog Biscuits for each student to take home.   *At sign up you must pick one of the three start times above, space is limited. Each student will work at individual stations to learn to make a dough from flour and yeast and how to rise it.  Afterwards each students has a dough of their own to shape and then top with fresh assorted items.  A full toppings bar will be provided by the Café of fresh assorted pizza toppings such as fresh spinach, grilled onions, pesto, cheeses, meats, etc.  And, then we will bake each pie for the student to consume at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. In this Chef Dinner Cooking Class, 4 different courses will be prepared using fresh herbs and local produce and paired each with a different type of White Wine to compliment the food.  All courses are prepared in front of the class throughout the night and Chef and Owner, Michelle Gioviti-Reeves from the Fat Tuscan, will be discussing and pouring samples of each wine presented.  This class is for students interested in learning about wines, tasting wines and enjoying gourmet food prepared fresh while learning how to pair each wine with select courses to make a dining experience for future dinner parties and guests.  This class is mainly and observation type class and a relaxed dinner atmosphere.

Join us for a fun morning of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)  *THIS CLASS IS NOW CLOSED AND FULL.

TUESDAY, APRIL 24TH  - BEGINNING BREAD (FRENCH BREAD) – 5:30 TO 8PM – 15 MAX. STUDENTS

Explore making bread in this cooking class.  Students will learn to make a fresh baguette from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  Bread will be baked in class and each student will go home with a baguette to bake at home that they made in class.  Aprons are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class.

TUESDAY, MAY 1ST  – HEALTHY COOKING WITH FRESH HERBS  - 6PM TO 9PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

THURSDAY, MAY 3RD – PASTA MAKING - MAKING RAVIOLI  - 6PM TO 9PM – 18 MAX. STUDENTS SIGN UP. (VEGETARIAN FRIENDLY)

Enjoy an evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s with an assortment of cheeses. The café will cook each individual’s ravioli’s for their dinner consumption as part of the class; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages or you may bring your own bottle of wine., cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

MOTHER'S DAY HIGH TEA BRUNCH & COOKING CLASS  - 11AM TO 3PM

Mother's Day High Tea Brunch and Cooking Class - Come enjoy a High Tea Brunch served in our courtyard with mom.  Starting at 11am we will be serving everything from scones and biscuits to eggs with mini cucumber sandwiches on English tiered towers for your enjoyment.  Included of course with assorted hot teas.  Also, as no brunch is complete without it, unlimited mimosa's and sangria's for you and mom to enjoy.  Then beginning at 12:30 we will have a class on Making Homemade Biscotti.  This will be a hands-on class in which each student will learn to make a biscotti dough from scratch and then flavor it with an assorted mixture of ingredients provided.  The instructor will prepare a biscotti batch from start to finish in class for consumption by students.  At the end of class warm biscotti will be served with hot tea and/or coffee.  Each student will be going home with a completed ready-to-bake dough for eating at a later date. ($40.00/Per person, includes full brunch, beverages and cooking class supplies and instructions)

The Fat Tuscan Cooking School offers students the most comprehensive Cooking Camp in Florida.  Our students get all day one-on-one experience from experienced chefs and work in a real kitchen preparing recipes.  With our hands-on learning approach we encourage each student to prepare recipes and meals for themselves and their families.  This camp is perfect for the kid who is excited about learning to cook and wants experience in the kitchen.  We provide each one of our small week long camps with the opportunity for students to feel engaged and comfortable working with food.  Our approach to learning about cooking is from working with our hands and our passions to enjoying the creativity of cooking as it nourishes a child from the inside out.  Cooking is way to learn positive self esteem and encourages learning through cooking.  There are always lots of laughs and love in our camp kitchen and we encourage learning through tactile engagement and hands on approaches to build self esteem, it is a strength which can build into many areas of a child’s development as well as learning through the act of doing and performing.

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.
