Cooking Classes are $40 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

Saturday, SEPT 2nd  - Brunch & Crepes Cooking Class – 11am to 2pm – 20 students Max.

Enjoy an evening making fresh ravioli’s from scratch & then eat them all yourself! Wednesday , SEPT 13th – All About Soups Cooking Class  -  6pm to 8pm  – 20 Students Max.

Making soups from scratch using fresh ingredients and building flavors -   (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  Soups and recipes will depend on what is in season and growing fresh at the time.  Recipes of dishes will be available to all students. **includes a dinner of all soups prepared to make a full dinner served with toasted bread and some take home soup for each student.  ($40.00/per person – includes soup tastings, cooking Class instruction and take home soup for each student.  This is mainly an observation type class with tastings.)

Thursday, September 21st – A night of Pasta & Sauce Cooking Class  -  6pm to 8pm. 20 Students Max.

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. Students will be making their own pasta from scratch and then learning knead and roll it out and form them into a variety of shapes.  During class the instructor will be making a Fresh Marinara Sauce (Vegetarian) and a Bolognese Sauce (a hearty meat sauce) and provide instruction on the process for making each sauce.  All students will be consuming their results at the end of class with their choice of the prepared sauces, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. *may bring your own bottle of wine. **includes dinner of fresh made pasta with a choice of sauce. Friday, September 22nd   - Tasting will be from 6pm to 8-pm, Show up anytime.  

Come Taste an assortment of Bubbles & Sweet Wines at the Fat Tuscan as you enjoy our favorite heavenly Italian Dessert – Cannoli! (A sweet cream and chocolate chip filled pastry).  We will be offering up to 4 specially selected  wines for you to taste as you enjoy a fresh cannoli made just for you.  This class is an introduction class type mixer and is perfect for those of you new to wines and tastings.  We also encourage you to come by the Café to enjoy an relaxing evening in our courtyard or touring the historic Vidal house for this tasting and to check out our other classes we will be offering throughout the fall in Gainesville.

Sunday, SEPT 24th – I LOVE MY DOG - BRUNCH & BISCUITS  -  9am to 1pm  – 35 Students Max. (Start times vary 9am, 10:30am and 12:00

Do you love your dog? Do you love Brunch?  Do you want to hang with your best friend making yummy treats for him/her?  This class is for you!!  Bring that pup to our patio with you for a class on making Dog Biscuits.  We will provide you with fresh wholesome dog biscuit dough from fresh ingredients with different flavors and you get to cut out and make assorted biscuits for your best friend to take home, (We won’t tell if some go missing along the way either.) Come enjoy a Sunday Brunch alongside your best pooch with us on our patio eating some tasty brunch foods, (don’t’ worry there will be lots of fresh foods for humans to eat too!)  We will supply all the ingredients for flavors such as Peanut butter Bacon, Chicken and Beef flavored dog biscuits for you to choose from and then each student will roll out, cut dog biscuit shapes and we will bake them for you while you eat an assortment of brunch items.  Each student will go home with around 10 – 15 biscuits for their pet with recipes of all the flavors included.  (Dogs must be on a leash and outside seating only with your pet is allowed.  Inside seating available but only for students without pets.)  ($40.00/ per person, includes a full brunch buffet with refreshments including mimosa’s and Sangria, cooking class recipes for Dog Biscuits to take home as well as fresh baked Dog Biscuits for each student to take home.   *At sign up you must pick one of the three start times above, space is limited. Friday, September 29th  -  Pasta, Pesto & Creamy Sauces – 6pm to 8pm .  20 max. Students  *THIS CLASS IS CURRENTLY FULL*

Come out and enjoy a fun Friday Night learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta.  This class will also include a demonstration of the instructor teaching and making a fresh pesto sauce & a variety of Creamy sauces during the length  of the class.  Then cook, eat and dine on your fresh pasta you made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta where students will learn to make either a tomato, spinach or butternut squash flavored pasta from scratch. Wednesday, OCT. 4th  - Vegetarian & Gluten Free Cooking Class – 6pm to 8:30pm – 20 students Max. THIS CLASS IS FULL.

Our traditional Tuscan Cooking style is naturally a source of easy vegetarian dishes such as hearty dishes consisting of beans, soups, & grilled vegetables.  Many recipes in this region are naturally Vegetarian and meat free but we will explore the ways to incorporate Gluten free options as well into this cooking style.  We will use and incorporate more fresh produce into our dishes for this class teaching students alternative cooking styles full of the same full flavors of Italian cooking that we love.  This class will explore recipes and show the heartiness of Tuscan cooking without meat, bread or pasta.  This class will consist mainly of observation of the instructor preparing the nights dishes.  Recipes will be provided to each students, and all food prepared will be consumed by students at the class.  Note taking is suggested for the class.  ($40.00/per person, includes class instructions, all supplies, recipe breakdown and a full dinner meal with refreshments.  This is mainly an observation type class with tastings.) Friday, OCTOBER 13TH  - Wine Tasting and Chef Dinner Cooking Class – All About Reds (Cabernet, Pinot Noir and Chianti -  6:30pm to 9pm.  20 Max. Students.

(*includes a 4 course dinner with up to 5/6 different wines tasted throughout.) *Proper ID required*
This class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared fresh and in front of the class with discussion during using and pairing the selected wines of the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class is for students who love wine and good food and for students wishing to learn more about wine.  Time: 6:30 to 6:45 seating, Dinner presentation and wines begin at 7pm.

Duration: Class will take about 2 hours from start to end.

Saturday OCTOBER 14th – Brunch & Crostata Cooking Class   -  11am to 2pm – 20 students Max.

Come enjoy Brunch served in our courtyard AND learn to make an rustic Italian Tart called Crostata.    Starting at 11am brunch buffet with everything from scones, biscuits and to eggs to mini cucumber sandwiches will be served along with assorted hot tea, cold tea’s & Mimosa’s/Sangria.  Beginning at 12:15 a class on making Crostata will begin. This will be a hands-on class in which each student will learn to make the butter crostata dough from scratch and form the tart. (a baking sheet pan is recommended to bring to this class and/or a Tart Pan).  The instructor will prepare a Crostata from start to finish in class for consumption by students. *Each student will be going home with a completed ready-to-bake Tart for eating at a later date, so please bring a Container to transport your Tat.  Assorted fillings for the tart will be available.  ($40/Per person - includes brunch, all supplies and cooking class instruction.  This is a hands-on type of class.)

Sunday, OCT. 15th  - Cheesecake Making Cooking Class   - 1pm to 3pm  - 15 Students Max.  *THIS CLASS IS CURRENTLY FULL.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) ($40.00/per person, includes all ingredients to prepare an individual cheesecake as well as take home recipes for each student. Friday, OCT. 20th – Italian Cooking With Wine Chef Demonstration Cooking Class  - 6pm to 8pm.  20 Max. Students.

Several courses will be made by the chef instructor all including wine as an ingredient, including, but not limited to an Appetizers, Dressings, Salads, Soups, Main Courses, and Desserts.  Students will consume all food prepared in class so this is a full dinner and chef instruction class in one.  This class is mainly an observation by students of instructor preparing dishes.  Note taking of recipes is encouraged as some recipes are adjusted as the class progresses.  ($40.00/per person, includes recipe discussion, chef demonstration and dinner meal *some wine tastings will be consumed in pairings of dishes, valid ID required. – COOKING AT THE BEACH - Italian Wines, Food & Music – 15 STUDENT MAX.  - 5pm to 8pm   -  $65.00 per person, includes full dinner courses, wine and cooking class instruction. **Travel to the destination required.  Two Dates available to sign up for, either Saturday or Sunday.

Students are invited to an evening cooking in the salty breezes of our East Coast along St. Augustine Beach.  From the 2nd story veranda of the Villa Del Sole Beach House in old St. Augustine Crescent Beach our large tables will be set for a night of cooking good food, good company and good wine.  The Chef will work with the students to prepare Italian inspired dishes using the local flavors & seafood of the coastal area and prepare traditional Italian recipes.  This multi-course dinner will be conducted in a relaxed environment for all to enjoy and consumed family style as the summer salt air plays a background to our evening on the veranda of the home with a view of the ocean.  A selection of Italian wines will be chosen and paired with the meal as well for guests to sample.   $65.00/per person.  Address will be provided upon signup/registration.  Class will consist of 3 to 4 courses.

Each student will learn to make a dough of their own and then top it with fresh assorted items provided by the Café and then consume their pie at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. Thursday, NOVEMBER 16TH  – Winter Soups & Wine; Squash and Pumpkin Bisques. -  6pm to 8pm  – 20 Students Max.

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create warm hearty bisques. Wine will be paired with each soup presented ( a total of three soups will be prepared and eaten in class served with warm hearty Tuscan Bread.  (some chopping and peeling may be required for this class, but the majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants and entire evening’s dinner dedicated to eating soups and sipping wine.  Recipes of dishes will be available to all students. **includes a dinner of soups served with toasted bread.  ($40.00/per person – includes all ingredients, supply’s, soups, and cooking Class instruction)

Sunday, NOVEMBER 19TH – ALL ABOUT PIES  – 2pm to  4:30pm  -  15 STUDENTS Max.

Join us at this Sunday afternoon class before thanksgiving and learn to make PIES!  Each student will make two pie’s from scratch to take home, perfect to share during Thanksgiving or for the Holiday season around the corner.  Students will make butter pie dough from scratch and then fill it with an assortment of fillings to choose from such as Chocolate, lemon, Apple and Pumpkin.   (*Each student needs to bring two GLASS PIE PANS.  The pies will be taken home to be baked at a later date.)  Students will also learn to make Whoopee Pie’s, a nostalgic southern pie cake that no one can resist.  Aprons are recommended as this is a hands-on class.  The whoopee pies will be eaten in class along with coffee and assorted beverages.  ($40.00/per person, includes all groceries, supplies, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *Children are welcome.  

Tuesday, NOVEMBER 21stMAKING LASAGNA COOKING CLASS – 6pm to 8pm – 15 person max. sign up.

In this class students will learn to make a quick sauce from scratch and to build the best gourmet lasagna ever – ‘it’s all about the ingredients!’  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a Lasagna to cook at home that will feed up to 6. All stuffing ingredients will be provided for the students as well as vegetarian and meat options.  This is a perfect class to get ready for Thanksgiving as there is nothing better than having a homemade Lasagna ready to pop in the oven for all that Holiday Company. (This is the Tuesday before the Thanksgiving Holiday).  **Class includes all supplies to create and make lasagna in class to take home for each student, class instruction, light snacks and take home recipes.  $40.00/per person.

DECEMBER

Sunday, December 17th – Italian Holiday Breads & Cookies – 1pm to 3pm – 20 students max.

In this cooking class day workshop students will be working with their own dough to create favorite traditional Italian Holiday Breads, Cookies, Tarts and/or Cakes from Italy.  Printed recipes will be given to each student and a discussion on techniques and instructions for each type of recipe will be given in class. (This class is a hands-on class and each student will be handling and making their own dough’s, aprons are recommended.)  Samples of desserts the chef prepares will be eaten in class and each student will be going home with an assortment of items he/she creates in class.  ($40.00/ Per Person includes all supplies, class instruction, light snacks, tastings and recipes to take home.)

Friday, December 22nd  -  4 Course Holiday Dinner & Wine Chef Cooking Class  – 6pm to 9pm – 25 students max. sign up. $50 per person.

The Holiday spirit will be in the air at the Fat Tuscan and in every recipe we make!  Come enjoy an evening of local gourmet food and participate in a cooking class as well to celebrate the holiday season.  We will teach you how to make your own Gnocchi for the Pasta course of the evening and then sit back and enjoy the rest of the dinner for a relaxing candle lit evening featuring the best local foods prepared fresh for you on the evening of the event.  One seating and only 15 couples so your table is yours for the evening.  No rush and no hectic background at the Fat Tuscan, we are all about our guests enjoying an intimate and relaxing evening of good food with good company to celebrate the holidays.  ($50.00/ per person, includes full 4 course dinner, recipes for the gnocchi making portion and a complimentary bottle of wine per table, per couple. * Sangria may be substituted for wine or Espresso at end of meal if no alcohol is desired.)

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.

Gift Certificates can be applied to all classes above unless specified.
