2017 Cooking Class Schedule 

Cooking Classes are $40 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

***** Summer 2017 Kids Cooking Camp *****

The Fat Tuscan Cooking School offers students the most comprehensive Cooking Camp in Florida.  Our students get all day one-on-one experience from experienced chefs and work in a real kitchen preparing recipes.  With our hands-on learning approach we encourage each student to prepare recipes and meals for themselves and their families.  This camp is perfect for the kid who is excited about learning to cook and wants experience in the kitchen.  We provide each one of our small week long camps with the opportunity for students to feel engaged and comfortable working with food.  Our approach to learning about cooking is from working with our hands and our passions to enjoying the creativity of cooking as it nourishes a child from the inside out.  Cooking is way to learn positive self esteem and encourages learning through cooking.  There are always lots of laughs and love in our camp kitchen and we encourage learning through tactile engagement and hands on approaches to build self esteem, it is a strength which can build into many areas of a child’s development as well as learning through the act of doing and performing.

JULY

**Special Class – Wine Tasting & Dinner Cooking Class $65.00/per person

Friday, JULY 21st  - Wine Tasting & Cooking Class – Appetizers and White Wines -  6:30pm to 9pm.  20 Max. Students.

This class is all about wine, fun, cooking and samplings.  In this hands-on Class students will explore multiple types of white wines paired with an appetizer that each student prepared with a group during the duration of the class.  There will be 4 groups of 4/5 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will also prepare the first appetizer of our Classic House made Bruschetta for all the students upon arriving.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.  The wines will be provided by Opici Winery and our favorite fun representative from Opici will be on hand to address and describe each wine for the class.  This is a great date night or fun night out with friends to socialize while eating fresh, great food and drinking even better wines.  Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person.

SATURDAY, JULY 22ND – ITALIAN PASTRY’S CLASS – 10 STUDENTS MAX - 1 TO 3PM  **THIS CLASS IS NOW FULL!

In this limited student class we will explore Italian Pastries.  Learn to pipe, make and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, vanilla whipped cream, sweet ricotta and Cream puffs and Éclairs.  This will be a hands on class in which students will pipe and fill pastries as well as learn to make the dough’s associated with each pastry.  Students are encouraged to bring an apron as well as a container for the finished pastry’s to take home.   ($40.00/per person, includes all ingredients, tools, recipes and class instruction.  Students will go home with an assorted mix of pastries) THIS CLASS IS NOW FULL. 

 

AUGUST

Friday, AUGUST 11TH – Making Pizza Cooking Class 6pm to 8pm.  15 Students Max.  

Join us for a Friday night of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. Each student will learn to make a dough of their own and then top it with fresh assorted items provided by the Café and then consume their pie at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. (15 student maximum). Includes light beverage refreshments or you may bring your own bottle of wine. (proper ID required) ($40.00/per person includes pizza dinner, cooking class instruction and printed recipes.  This will be a hands-on type of class.)

Thursday AUGUST 20TH – All About Soups Cooking Class  -  6pm to 8pm  – 20 Students Max.

Making soups from scratch using fresh ingredients and building flavors -   (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  Recipes of dishes will be available to all students. **includes a dinner of all soups prepared to make a full dinner served with toasted bread and some take home soup for each student.  ($40.00/per person – includes soup tastings, cooking Class instruction, recipes and take home soup for each student.  This is mainly an observation type class with tastings.)

Thursday, AUGUST 24th – A night of Pasta & Sauce Cooking Class  -  6pm to 8pm. 20 Students Max.

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. Students will be making their own pasta from scratch and then learning knead and roll it out and form them into a variety of shapes.  During class the instructor will be making a Fresh Marinara Sauce (Vegetarian) and a Bolognese Sauce (a hearty meat sauce) and provide instruction on the process for making each sauce.  All students will be consuming their results at the end of class with their choice of the prepared sauces, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. *may bring your own bottle of wine. **includes dinner of fresh made pasta with a choice of sauce. ($40.00/per person includes dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

Saturday AUGUST 26TH – Brunch & Biscotti Cooking Class   -  11am to 2pm – 20 students Max.

Come enjoy Brunch served in our courtyard AND learn to make Biscotti, (a classic Italian Cookie).  Starting at 11am brunch buffet with everything from scones, biscuits and to eggs to mini cucumber sandwiches will be served along with assorted hot tea, cold tea’s & Mimosa’s/Sangria.  Beginning at 12:30 a class on making Homemade Biscotti will begin. This will be a hands-on class in which each student will learn to make biscotti dough from scratch. The instructor will prepare a biscotti batch from start to finish in class for consumption by students. *Each student will be going home with a completed ready-to-bake dough for eating at a later date, so please bring a Container to transport your raw dough.  ($40/Per person - includes brunch, all supplies and cooking class instruction.  This is a hands-on type of class.)

Sunday, AUGUST 27TH -  Beginning Bread Making 10am to 1pm (Day workshop) *Great for parents & kids. 20 Student Max.

Explore making bread in this cooking class.  Students will learn to make a fresh baguette from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  Bread will be baked in class and each student will go home with a baguette to bake at home that they made in class.  Aprons are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.)

 

SEPTEMBER 

Sunday, SEPT 3rd  - Brunch & Crepes Cooking Class – 11am to 2pm – 20 students Max.

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

Thursday, SEPT. 7th - Making Ravioli Cooking Class 6pm to 8pm. 20 Students Max.

Enjoy a Friday evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s.  We will then cook each individual’s ravioli’s for their dinner consumption; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages or you may bring your own bottle of wine., cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

Wednesday , SEPT 13th – All About Soups Cooking Class  -  6pm to 8pm  – 20 Students Max.

Thursday, SEPT 14th – Making Gnocchi Cooking Class 6pm to 8pm. 20 Students Max. (*Gluten Free options)

Enjoy A Friday evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  Aprons are recommended as each student will be working with his/her own dough. *may bring your own bottle of wine.  ($40.00/per person, includes Gnocchi dinner with choice of sauce, light beverages, cooking instruction and printed recipes.  This is a hands-on type of class.)

Sunday, SEPT 24th – I LOVE MY DOG - BRUNCH & BISCUITS  -  9am to 1pm  – 35 Students Max. (Start times vary 9am, 10:30am and 12:00

Do you love your dog? Do you love Brunch?  Do you want to hang with your best friend making yummy treats for him/her?  This class is for you!!  Bring that pup to our patio with you for a class on making Dog Biscuits.  We will provide you with fresh wholesome dog biscuit dough from fresh ingredients with different flavors and you get to cut out and make assorted biscuits for your best friend to take home, (We won’t tell if some go missing along the way either.) Come enjoy a Sunday Brunch alongside your best pooch with us on our patio eating some tasty brunch foods, (don’t’ worry there will be lots of fresh foods for humans to eat too!)  We will supply all the ingredients for flavors such as Peanut butter Bacon, Chicken and Beef flavored dog biscuits for you to choose from and then each student will roll out, cut dog biscuit shapes and we will bake them for you while you eat an assortment of brunch items.  Each student will go home with around 10 – 15 biscuits for their pet with recipes of all the flavors included.  (Dogs must be on a leash and outside seating only with your pet is allowed.  Inside seating available but only for students without pets.)  ($40.00/ per person, includes a full brunch buffet with refreshments including mimosa’s and Sangria, cooking class recipes for Dog Biscuits to take home as well as fresh baked Dog Biscuits for each student to take home.   *At sign up you must pick one of the three start times above, space is limited. OCTOBER  

Wednesday, OCT. 4th  - Vegetarian & Gluten Free Cooking Class – 6pm to 8:30pm – 20 students Max.

Our traditional Tuscan Cooking style is naturally a source of easy vegetarian dishes such as hearty dishes consisting of beans, soups, & grilled vegetables.  Many recipes in this region are naturally Vegetarian and meat free but we will explore the ways to incorporate Gluten free options as well into this cooking style.  We will use and incorporate more fresh produce into our dishes for this class teaching students alternative cooking styles full of the same full flavors of Italian cooking that we love.  This class will explore recipes and show the heartiness of Tuscan cooking without meat, bread or pasta.  This class will consist mainly of observation of the instructor preparing the nights dishes.  Recipes will be provided to each students, and all food prepared will be consumed by students at the class.  Note taking is suggested for the class.  ($40.00/per person, includes class instructions, all supplies, recipe breakdown and a full dinner meal with refreshments.  This is mainly an observation type class with tastings.)

Sunday, OCT. 15th  - Cheesecake Making Cooking Class   - 1pm to 3pm  - 15 Students Max.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) ($40.00/per person, includes all ingredients to prepare an individual cheesecake as well as take home recipes for each student. Light snacks and refreshments will be served.  *This is a hands-on type class.)  

Thursday, OCT. 19th – Italian Cooking With Wine Chef Demonstration Cooking Class  - 6pm to 8pm.  20 Max. Students.

Several courses will be made by the chef instructor all including wine as an ingredient, including, but not limited to an Appetizers, Dressings, Salads, Soups, Main Courses, and Desserts.  Students will consume all food prepared in class so this is a full dinner and chef instruction class in one.  This class is mainly an observation by students of instructor preparing dishes.  Note taking of recipes is encouraged as some recipes are adjusted as the class progresses.  ($40.00/per person, includes recipe discussion, chef demonstration and dinner meal *some wine tastings will be consumed in pairings of dishes, valid ID required. This is mainly an observation type class with full meal and tastings.)

Sunday, OCT  29th – I LOVE MY DOG – BRUNCH, BISCUITS & DOGGY COSTUME HALLOWEEN CONTEST  -  9am to 1pm  – 35 Students Max. (Start times vary 9am, 10:30am and 12:00

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with dipping oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.
