2018 Cooking Class Schedule 

Cooking Classes range from $40 to $65 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

  JUNE

Tuesday & Wednesday June 5th & 6th - Two Day Bread Basics Class (Baguette & Loaf Breads).  15 student max.  5:30 pm to 7pm.

Work with Yeast dough and Sour Dough Starter the First night, making a traditional baquette or Braid Bread to take home.  We will also learn and prepare a Sour Dough Loaf for an over night long rise.  The second night, learn about baking Sour Dough and Loaf bread with cooking techniques and steam rising for the oven disussed.  *For correct Steam Loaf Rising a Cast Iron Pot with lid is necessary and/or a Dutch Oven with Lid.  Baking of the Loaf will be done at individual homes.  Samples and instructor bread will be baked in class.  This class requires an overnight rise for the Loaf Bread.  ($40.00 per person, per night. - please purchse two gift certificates $80.00 total for this class registration.  Class will include light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.  Aprons are recommended as well as a sheet pan for baking.)

The Fat Tuscan Cooking School offers students the most comprehensive Cooking Camp in Florida.  Our students get all day one-on-one experience from experienced chefs and work in a real kitchen preparing recipes.  With our hands-on learning approach we encourage each student to prepare recipes and meals for themselves and their families.  This camp is perfect for the kid who is excited about learning to cook and wants experience in the kitchen.  We provide each one of our small week long camps with the opportunity for students to feel engaged and comfortable working with food.  Our approach to learning about cooking is from working with our hands and our passions to enjoying the creativity of cooking as it nourishes a child from the inside out.  Cooking is way to learn positive self esteem and encourages learning through cooking.  There are always lots of laughs and love in our camp kitchen and we encourage learning through tactile engagement and hands on approaches to build self esteem, it is a strength which can build into many areas of a child’s development as well as learning through the act of doing and performing.

JULY

MONDAY & TUESDAY JULY 2ND & 3RD  - TWO DAY BREAD INTERMEDIATE BASICS CLASS (SOUR DOUGH LOAF & SWEET YEAST BREADS).  10 STUDENT MAX.  5:30 PM TO 7:30PM.

Work with different types of Yeast dough’s including a Sour Dough type of bread. AUGUST

THURSDAY, AUGUST 16TH  – HEALTHY COOKING WITH FRESH HERBS  - 6PM TO 9PM  - 20 MAX. STUDENTS (VEGETARIAN FRIENDLY)

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

FRIDAY, AUGUST 17TH – PASTA MAKING; MAKING GNOCCHI – 6PM TO 9PM – 20 MAX. STUDENTS (GLUTEN FREE OPTIONS)

Enjoy A Friday evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  *Includes light beverages, cooking instruction and printed recipes.  (*Hands on type of class - $40.00/per person, includes Gnocchi dinner.) *may bring your own bottle of wine if desired.

SEPTEMBER

SUNDAY, SEPTEMBER 2ND  - BRUNCH & CREPES COOKING CLASS – 11AM TO 2PM – 20 STUDENTS MAX.  (GLUTEN FREE OPTIONS)

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. (*Hands on type class - $40.00/per person, includes class instructions and a full brunch with crepes and side dishes.  This will be a hands-on type of class.)

WEDNESDAY, SEPTEMBER 12TH – FRESH PASTA MAKING - FETTUCINE & SAUCE MAKING -  BOLOGNESE SAUCE (HEARTY MEAT SAUCE). – 6PM TO 8:30PM – 20 STUDENTS MAX.

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make a fresh sauce to pair with the pasta. Students will be making their own pasta from scratch as well as cutting it into the Fettuccine shape.  Students will then be consuming their results at the end of class, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations.  **includes dinner of fresh made pasta with a choice of sauce. SATURDAY, SEPTEMBER 15TH  - CHEESECAKE MAKING COOKING CLASS   - 3PM TO 5PM  - 15 STUDENTS MAX.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring an 8” inch spring form pan, all other ingredients & supplies will be provided by Fat Tuscan however.) This amazing Cooking Class will be a wonderful week long stay in the heart of Tuscany Italy staying in the middle of the olive groves and countryside.  Each couple will be located at a small Bnb which once was an old grain mill and with Cooking Classes taking place each night at the home of an traditional Italian family.  The Cooking Class Vacation includes 8 night stay in a Bnb, transportation, breakfast & cooking class dinner, 7 nights of cooking class instruction, 6 days of excursions to small little medieval towns amongst the hills of Tuscany and a full time chef and interpreter during your week stay.  The classes and your accommodations will take place in a small village about one hour from Florence Italy near Arezzo.

Students are invited to an evening cooking in the salty breezes of our East Coast along St. Augustine Beach.  From the 2nd story veranda of the Villa Del Sole Beach House in old St. Augustine Crescent Beach our large tables will be set for a night of cooking good food, good company and good wine.  The Chef will work with the students to prepare Italian inspired dishes using the local flavors & seafood of the coastal area and prepare traditional Italian recipes.  This multi-course dinner will be conducted in a relaxed environment for all to enjoy and consumed family style as the summer salt air plays a background to our evening on the veranda of the home with a view of the ocean.  A selection of Italian wines will be chosen and paired with the meal as well for guests to sample.   (Address will be provided upon signup/registration.)  Class will consist of 3 to 4 courses.  *Observation type class. $65.00/per person includes full dinner, cooking instruction and wine sampling.)

NOVEMBER

FRIDAY, NOVEMBER 9TH – IRON CHEF - COUPLES COOKING CHALLENGE – APPETIZERS & WINE – 6 TO 8:30PM - 20 MAX. STUDENTS.

SPECIAL PRICING $65.00/PP  

This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person. THURSDAY, NOVEMBER 15TH  – Winter Soups & Wine; Squash and Pumpkin Bisques. -  6pm to 8pm  – 20 Students Max.

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create warm hearty bisques. Wine will be paired with each soup presented ( a total of three soups will be prepared and eaten in class served with warm hearty Tuscan Bread.  (some chopping and peeling may be required for this class, but the majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants and entire evening’s dinner dedicated to eating soups and sipping wine.  Recipes of dishes will be available to all students. Includes a dinner of several different types of soups served with toasted bread and wine tasting pairing.  (*hands on class - $40.00/per person – includes all ingredients, supply’s, soups, and cooking Class instruction)

SPRING & FALL TERM classes are posted at the beggining of each term (Spring - Jan. - June) (Fall - July - Dec.)

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up.

Gift Certificates can be applied to all classes above unless specified.

** COMING IN 2019 - - Local, Coastal & Sustainable Farm Tours & Cooking Class Excursions!  They will be announced throughout the year as they are set up.  Please look back here or join our mailing list for updates by sending an email to fattuscancafe@ gmail.com with "Add Me" in the subject Line.  These excursions will use buses for traveling to and from farms’ as part of the package.
