Cooking Classes range from $40 to $65 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

WEDNESDAY, JANUARY 8TH – PASTA MAKING; MAKING GNOCCHI – 6PM TO 9PM – 20 MAX. STUDENTS (GLUTEN FREE OPTIONS, VEGETARIAN FRIENDLY & KID FRIENDLY)

Enjoy an evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  There will be at least two different types of sauces to top the Gnocchi for students to choose from and the class instructor will be going over sauce preparation during the class.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class. *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes Gnocchi dinner.) *may bring your own bottle of wine if desired.

THURSDAY, JANUARY 9TH – PASTA MAKING; MAKING RAVIOLI – 6PM TO 9PM – 18 MAX. STUDENTS (VEGETARIAN FRIENDLY & KID FRIENDLY)

Enjoy an evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s with an assortment of cheeses. The café will cook each individual’s ravioli’s for their dinner consumption as part of the class; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages or you may bring your own bottle of wine., cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

SATURDAY, JANUARY 11TH  - WINTER SOUPS – 4PM TO 7PM – 20 MAX. STUDENTS

This class is All about Soups, so if you are a soup lover it is perfect for you.  With the cold setting in for us, soups make a perfect tasty meal to prepare as well as an healthy option for the new year. In this class we will be making soups from scratch using fresh ingredients and building flavors; stocks and soup flavors will be explored in this series. (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  *Includes light beverages, cooking instruction, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an evening meal of three types of soups. *May bring your own bottle of wine to share. THURSDAY, JANUARY 16TH – HEALTHY COOKING WITH FRESH HERBS  - 5:30PM TO 8PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

This Chef led Cooking Class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared by our house chef fresh and in front of the class with discussion throughout each course.  The chef will also feature the selected wines in each course as it is paired with the dishes for the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class is for students who love wine and good food and for students wishing to learn more about wine.  Includes a full coursed dinner with wine pairing tastings (*Observation Type Class - $65.00/per person – includes dinner, class instruction and wine tastings.)

MONDAY, JANUARY 20TH - PASTRIES, CREAM PUFFS & ÉCLAIRS CLASS – 5PM TO 8PM -  16 STUDENTS MAX.

Join us at this evening class exploring all things Pastries!  Learn to pipe, make and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, chocolate Mousse, and Vanilla whipped cream as well as the recipe for creating Cream Puffs and Éclairs.  This will be a hands-on class with some detailed work required such as piping and filling warm delicate pastries.  Each student will go home with an assorted mix of pastries so a container is recommended for the finished pastries to be taken home. Aprons are recommended as this is a hands-on class and chocolate may be used.  (Hands on class - $40.00/per person, includes all groceries, supplies, tools, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *This class may not be suitable for Children due to the delicate nature of the pastries involved.   

WEDNESDAY, JANUARY 22ND  HERBS, HERBS, HERBS – COOKING WITH FRESH HERBS  - 11AM TO 2PM – 12 MAX. STUDENTS

This class will include an excursion to The Fat Tuscan's Herb Garden at Grow Hub, followed by picking and harvesting a variety of fresh herbs and then a cooking class at the Café of different recipes centered around using the herbs we harvest.  This is a perfect class for beginner cooks who don’t know their way around using fresh herbs in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes using them.   Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will include a trip to the Nonprofit farm Grow Hub (https://www.facebook.com/GROWHUBGNV/ )with a discussion on growing herbs in our climate as well.  This will be an interactive and observation class with note taking encouraged for the recipes we create.  All food prepared in class will be consumed or taken home by students.  At least 3 different types of recipes will be prepared in class.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.   FEBRUARY 2020

WEDNESDAY, FEBRUARY 5TH – Tiramisu Class; Learn to Create this Classic Italian Dessert – 11AM TO 1PM – 15 STUDENTS MAX.

This class will cover the classic favorite Italian Dessert known as Tiramisu.  It uses layers of sweetened cream including mascarpone, which is an Italian type of whipped cream specifically for Tiramisu.  In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies to layer with as well as types of soaking for the cookies.  *Please bring a Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep OR an 8 to 9 inch spring form pan.   ($40.00/per person, includes class instructions, ingredients, tools and equipment as well as printed recipes.  This class will also include a fresh Tiramisu to be taken home and chilled, please bring a glass square/rectangular baking sheet that can be refrigerated.) 

THURSDAY, FEBRUARY 6TH – A NIGHT OF PASTA & SAUCE - COOKING CLASS  - 6PM TO 9PM – 18 MAX. STUDENTS SIGN UP. (VEGETARIAN FRIENDLY)

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. Students will be making their own pasta from scratch and then learning knead and roll it out and form them into a variety of shapes.  During class the instructor will be making a Fresh Marinara Sauce (Vegetarian) and a Bolognese Sauce (a hearty meat sauce) and provide instruction on the process for making each sauce.  All students will be consuming their results at the end of class with their choice of the prepared sauces, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. *may bring your own bottle of wine. **includes dinner of fresh made pasta with a choice of sauce. SUNDAY, FEBRUARY 9TH  - BRUNCH & CREPES Cooking Class -  11am to 2pm - 20 students max. 

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. *kids welcome.  ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

Come out and enjoy a fun Thursday night learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta.  This class will also include a demonstration of the instructor teaching and making a fresh pesto sauce & a variety of Creamy sauces during the length of the class.  Then cook, eat and dine on your fresh pasta you made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta where students will learn to make either a tomato, spinach or butternut squash flavored pasta from scratch. (plain is also taught if no flavoring is desired).  An apron is encouraged for this class as each student will be making their own pasta for the evening using flour and eggs.  *may bring your own bottle of wine.  ** includes a full dinner of fresh made flavored pasta with a choice of fresh sauce made in class.   MARCH 2020

WEDNESDAY,  MARCH 4TH  – BREAD CLASS – WORKING WITH WET YEAST DOUGH’S  16 Students Max.  1:30pm to 5pm

Explore working with wet yeast dough’s in this class.  Each student will work with two types of dough, both a savory & sweet bread Dough.  Students will learn how to combine ingredients, knead and rise yeast dough’s to create a savory dough and a sweet nut & fruit bread.  This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  One bread will be baked in class and each student will go home with their baked bread and some dough to bake at a later time.  Aprons are recommended for this class as each student will be working with substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class. **Bring a container for transporting the 2nd yeast dough home.

THURSDAY,  MARCH 5TH – PIZZA NIGHT – MAKING FRESH PIZZA FROM SCRATCH  – 6PM TO 8PM .  15 MAX. STUDENTS

Join us for an evening of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. Each student will work at individual stations to learn to make a dough from flour and yeast and how to rise it.  Afterwards each students has a dough of their own to shape and then top with fresh assorted items.  A full toppings bar will be provided by the Café of fresh assorted pizza toppings such as fresh spinach, grilled onions, pesto, cheeses, meats, etc.  And, then we will bake each pie for the student to consume at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. This class is perfect for beginners. Learn to make perfect pie dough and then use it to create a fresh fruit pastry. Each student will be working with his/her own dough throughout class. Children are welcome with a parent. This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make a fresh sauce to pair with the pasta. Students will be making their own pasta from scratch as well as cutting it into the Fettuccine shape.  The instructor will also give a demonstration on making the best fresh classic Alfredo sauce.  Students will then be consuming their pasta at the end of class, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations.  **includes dinner of fresh made pasta with a choice of sauce; a classic Marinara sauce will also be available. WEDNESDAY, APRIL 1ST – CHEESECAKE MAKING COOKING CLASS – 11AM TO 1PM – 15 students max.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring an 8 or  9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) ($40.00/per person, includes all ingredients to prepare an individual cheesecake as well as take home recipes for each student. THURSDAY, APRIL 2nd -  MAKING FLAVORED PASTA’S & CLASSIC SAUCES – 20 Max  STUDENTS  - 6PM TO 8:30PM.   

Come out and enjoy a fun evening learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta such as tomato, spinach, pesto and even bright red beet colored pasta.  This class will also include a demonstration of the instructor teaching and making two different fresh sauces from scratch during the length  of the class.  Then students will cook, eat and dine on their fresh pasta made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta.  (*plain is also taught if no flavoring is desired).  An apron is encouraged for this class as each student will be making their own pasta for the evening using flour and eggs.  *may bring your own bottle of wine. *kids welcome ** includes a full dinner of fresh made flavored pasta with a choice of fresh sauce made in class.  ($40.00/per person includes dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

THURSDAY, APRIL 9TH– SOUPS & WINE TASTING COOKING CLASS -  6pm to 8pm  – 15 Students Max.

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create several types of soups from creamy bisques to warm hearty stews to some light summer soups.  A small Wine tasting will be paired with each soup presented as a compliment to the soups.  A total of three soups will be prepared and eaten in class served with our toasted Tuscan Bread.  There may be some chopping and peeling and or working at group stations to create soups for this class as well as a majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants more recipes and suggestions for creating soups at home.  Recipes of dishes will be available to all students. SATURDAY, APRIL 11TH  - PIES - MAKING PIE’S WORKSHOP  - 15 Max. STUDENTS.  – 2PM TO 4PM

Join us at this Saturday afternoon class learning to make PIES!  Each student will make two pie’s from scratch to take home. Students will make butter pie dough from scratch and then fill it with an assortment of fillings to choose from such as Chocolate, lemon, Apple and Pumpkin.   (*Each student needs to BRING TWO (2) GLASS/CERAMIC PIE PANS.  The pies will be taken home to be baked at a later date.)  Aprons are recommended as this is a hands-on class.  The instructor will have several pies finished and they will be eaten in class along with coffee and assorted beverages for a tasting portion of the class.  ($40.00/per person, includes all groceries, supplies, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *Children are welcome.  

WEDNESDAY, APRIL 15th - HERB BREAD & YEAST DOUGH – WORKING WITH BREAD -   16 Students Max.  11:00AM to 2pm

Explore making bread from scratch and learn how to work with yeast dough’s in this class.  Students will also learn to mix dough’s with fresh herbs to create different types of formed bread dough’s such as baguette’s, braids and filled breads.  Students will learn how to combine ingredients, knead and rise yeast dough’s to create savory breads. This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  Bread will be baked in class and each student will go home with their baked breads.  Aprons are recommended for this class as each student will be working with substantial amounts of flour and a baking sheet is preferred for transportation home.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class.

WEDNESDAY, APRIL 29TH - MAKING BISCOTTI, ASSORTED FLAVORS – 6 PM TO 8PM -  15 Students Max.

In this cooking class students will learn to create an Italian favorite traditional Cookie known as Biscotti.  Each student will mix and measure their own batch of dough with various toppings and ingredients available to choose from for flavorings such as almonds, walnuts, dried fruits such as cherries and cranberries as well as assorted types of chocolate morsels, etc.  Students may choose to split their dough’s to make several different types to have an assortment to take home and enjoy.  This is perfect class with the holiday’s right around the corner and the fact that biscotti’s make a great cookie exchange cookie.   Printed recipes will be given to each student and a discussion on techniques and instruction demonstration for making the dough from scratch will be given in class. This class is a hands-on class and each student will be handling and making their own dough’s.  It is recommended that each student have an apron as well as a container to take home the cookie’s they make in class.  Samples of desserts will be eaten in class as the demonstration portion.  (*Hands on type class - $40.00/per person, includes all ingredients, supplies, class instruction and printed recipes for each student. Explore making bread in this cooking class.  Students will learn to make a basic yeast dough from raw ingredients in this class.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed as well as yeast basics and shaping of bread.  Bread will be baked in class and each student will go home with a baguette and a shaped bread of choice.  Aprons are recommended for this class as each student will be working with his or own dough and substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class.

THURSDAY, MAY 7TH -– PASTA MAKING - MAKING RAVIOLI  - 6PM TO 9PM – 18 MAX. STUDENTS SIGN UP. (VEGETARIAN FRIENDLY)

Enjoy an evening making fresh ravioli’s from scratch & then eat them all yourself! There is nothing more satisfying than rewarding yourself by eating the fruits of your own labors.  Each student will learn to make egg pasta dough from scratch & then learn to roll it out and hand form stuffed ravioli’s with an assortment of cheeses. The café will cook each individual’s ravioli’s for their dinner consumption as part of the class; several sauce options will be available.  This class is a hands-on class, so aprons are recommended.  *Includes light beverages or you may bring your own bottle of wine., cooking class instruction and printed recipes.  ($40.00/per person, includes ravioli dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

Mother's Day High Tea Brunch and Cooking Class - Come enjoy a High Tea Brunch served in our courtyard with mom.  Starting at 11am we will be serving everything from scones and biscuits to eggs with mini cucumber sandwiches on English tiered towers for your enjoyment.  Included of course with assorted hot teas, complimentary mimosa's and sangria's for you and mom to enjoy.  Then beginning at 12:30 we will have a group cooking class and presentation for Making Homemade Biscotti.  This will be a hands-on class in which each student will learn to make biscotti dough from scratch and then flavor it with an assorted mixture of ingredients provided.  The instructor will prepare a biscotti batch from start to finish in class for consumption by students.  At the end of class warm biscotti will be served with hot tea and/or coffee.  Each student will be going home with a ready-to-bake dough for eating at a later date. (*Hands On Type of Class - $50.00/Per person, includes full brunch, beverages as well as all ingredients and supplies for class; instructions & recipes included.) WEDNESDAY, MAY 13TH – All About Pickling and Spices Cooking Class  - 11 to 2pm.  15 Students Max.

In this class the instructor will give a presentation on spices and the art of pickling to add flavor and preserve ingredients.  Then each student will be provided with all materials and ingredients to pickle a variety of their own vegetables to take home.  A discussion on the process of pickling and the different types of ways to preserve fresh vegetables and fruits in your kitchen will be discussed.  Some pre-prepared pickled condiments and vegetables will be available in class for tasting.  This will be a hands on class in which dicing, slicing and pickling will be done by each student.  (*Hands On and some Observation type cooking class.  $40.00/per person, includes all materials, chef demonstration, printed recipes as well as take home containers. This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of wine or cordials.) *Proper ID required* / $65.00/per person. Join us for this great chef demonstration class in which up to three courses of an Italian inspired meal will be prepared and eaten in class for all students to enjoy.  This class includes a full meal, all vegetarian friendly, of the traditional pasta first course, savory vegetables and salad 2nd course and dessert 3rd course.   Recipes will be discussed during preparation of meal and note taking is encouraged.  Observation type classes are where students will watch as the instructor makes three different recipes for the evening of fresh foods and each course is consumed by the students.  This is a full coursed dinner with chef instruction and discussion during the evening.  ( $40.00/per person, includes chef demonstration, preparation of all foods fresh in front of class, class instruction and full dinner meal with beverages for all students). *vegetarian Friendly.

COOKING IN TUSCANY - EUROPEAN COOKING CLASS & TOUR

This amazing Cooking Class will be a wonderful week long stay in the heart of Tuscany Italy staying in the middle of the olive groves and countryside.  Each couple will be located at a small Bnb which once was an old grain mill and with Cooking Classes taking place each night at the home of an traditional Italian family.  The Cooking Class Vacation includes 8 night stay in a Bnb, transportation, breakfast & cooking class dinner, 7 nights of cooking class instruction, 6 days of excursions to small little medieval towns amongst the hills of Tuscany and a full time chef and interpreter during your week stay.  The classes and your accommodations will take place in a small village about one hour from Florence Italy near Arezzo.

WEDNESDAY, NOVEMBER 13TH – PASTRIES, CREAM PUFFS & ÉCLAIRS CLASS – 2PM TO 4PM -  15 Students Max.

Join us at this evening class exploring all things Pastries!  Learn to pipe, make and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, chocolate Mousse, and Vanilla whipped cream as well as the recipe for creating Cream Puffs and Éclairs.  This will be a hands on class with some detailed work required such as piping and filling warm delicate pastries.  Each student will go home with an assorted mix of pastries so a container is recommended for the finished pastries to be taken home. FRIDAY, NOVEMBER 15TH – IRON CHEF COUPLES COOKING CHALLENGE – APPETIZERS & WINE – 6PM TO 8:30PM - 20 Students Max.

SPECIAL PRICING $65.00/PP  

This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person. THURSDAY, NOVEMBER 21ST – MAKING RAVIOLI PASTA  – 6PM TO 9PM – 20 Students Max. (VEGETARIAN FRIENDLY)  *This class is now sold out. 

Ravioli, Ravioli; fabulous Ravioli.  Enjoy an evening learning to form and make from scratch ravioli’s.  This cooking class will teach you how to make your own Ravioli’s as the main course for your evening dinner and then we will cook each student’s pasta for them to enjoy with a choice of fresh made sauces.  We will teach each student to make fresh pasta from eggs and flour and then roll out the fresh pasta dough to be used to stuff assorted cheeses and fillings into individual ravioli’s.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes class instruction, supplies, recipes and a ravioli dinner.) *may bring your own bottle of wine if desired. *Vegetarian Friendly.  *THIS CLASS IS NOW FULL

TUESDAY, NOVEMBER 26th – MAKING LASAGNA COOKING CLASS – 6PM to 8PM – 15 Students Max.

Join us this Tuesday before Thanksgiving making Lasagna for your Holiday.  Students will make two different sauces from scratch, a marinara & a white Cream Sauce Bechamel.  These sauces will then be used to build the best gourmet lasagna ever – ‘it’s all about the ingredients!’  Students will learn tips on how to assemble their own lasagna for consumption later. Each student will go home with a Lasagna to cook at home that will feed up to 6. All stuffing ingredients will be provided for the students as well as vegetarian and meat options.  This is a perfect class to get ready for Thanksgiving as there is nothing better than having a homemade Lasagna ready to pop in the oven for all that Holiday Company.  *Please Bring a Glass/Ceramic 3 or 4 quart rectangular Lasagna Baking Dish **Aprons are recommended. WEDNESDAY, DECEMBER 11TH – Italian Holiday Breads – 1pm to 3pm – 25 Students Max.

In this cooking class day workshop students will be working with several types of yeast dough recipes to create and shape traditional Italian Holiday Breads.  Each student will be working with their own dough at individual stations.  An assortment of fillings and toppings will be available for students to choose from to put into their breads. Printed recipes will be given to each student and a discussion on techniques and instructions for the dough and forming the dough will be given.  This class is a hands-on class and each student will be handling and making their own dough’s, aprons are recommended.  Samples of desserts will be eaten in class and each student will be going home with an bread to bake at home.  *options to bake at class will be given but requires an additional 30/45 min. time frame to bake.  Please bring a sheet pan to rise your breads on and/or for baking.  **Kids welcome.  ($40.00/ Per Person includes all supplies, class instruction, light snacks, tastings and recipes to take home.)

FRIDAY, DECEMBER 20TH -  4 Course Holiday Dinner & Wine Chef Cooking Class  – 6pm to 9pm – 25 students max. sign up. $65 per person.

The Holiday spirit will be in the air at the Fat Tuscan in every recipe we make!  Come enjoy an evening of local gourmet food prepared fresh by our chef and even participate in an interactive cooking class.  We will be celebrating the holiday season and will teach you how to make your own Gnocchi for the Pasta course of the evening and then sit back and enjoy the rest of the dinner for a relaxing candle lit evening featuring the best local foods prepared fresh for you on the evening of the event.  One seating; 10 tables available.  Your table is yours for the evening perfect for a no-rush background at the Fat Tuscan to start off your holiday spirit.  We are all about our guests enjoying an intimate and relaxing evening of good food with good company to celebrate the holidays.  ($65.00/per person;  includes full 4 course dinner, recipes for the gnocchi making portion and a complimentary bottle of wine per table, per couple. * Sangria may be substituted for wine or Espresso at end of meal if no alcohol is desired. *No Substitutions, Proper ID Required. ) *THIS CLASS IS NOW FULL. 

 

SUNDAY, DECEMBER 22ND - ALL ABOUT TARTS  - 3PM TO 5PM  -  18 Students Max. *This class is now sold out. 

In this cooking class students will be learning to make a tart pie dough from scratch.  Each student will be working with their own dough to create a filled tart to take home and bake at a later date.  Various toppings and ingredients will be provided for students to choose from for the filled tart such as several types of fruit jams and compotes.  A discussion and example of how to do lattice work and design work for the top of the tarts will also be discussed.  Printed recipes will be given to each student and a discussion on techniques and instruction demonstration for making the dough from scratch will be given in class. This class is a hands-on class and each student will be handling and making their own dough’s.  It is recommended that each student have an apron. *A 9 inch or smaller removable bottom tart pan and a Cookie Sheet is required for this class.  ** Finished Tarts will be baked at home.  Samples of desserts will be eaten in class as the demonstration portion.   (Hands-on class - $40.00/per person, includes all groceries, supplies, tools, class instruction and printed recipes.) *Kids are welcome  *THIS CLASS IS NOW FULL. 

 

THURSDAY, DECEMBER 26TH – AN AFTERNOON OF PASTA MAKING – Making Ravioli’s & Marinara Sauce-  1PM  TO 3:30PM  -  15 Students Max.

Come join us for an afternoon of making pasta and sauce in this class.  Students will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauce to pair with the pasta. Students will be making their own pasta dough from scratch and then learn kneading and rolling techniques.  We will also show students how to form and stuff the pasta with an assortment of fillings.  During class the instructor will be making a Marinara Sauce as a demonstration for the class.  Students will be making fresh pasta to take home for dinner that evening or to freeze to eat at a later date.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations. *a towel and cookie sheet is recommended to bring and/or your own Tupperware container to transport finished pasta and some sauce home.   ($40.00/per person includes all grocery supplies, tools/equipment & cooking class instruction as well as printed recipes including cooking instructions for the pasta.  This is a hands-on type of class.) *Kids Welcome

 

FRIDAY, DECEMBER 27TH – A NIGHT OF CREPES   6PM TO 8:30PM - 20 MAX. STUDENTS.  *This class is now sold out.

Come enjoy an evening flipping and making crepes.  We will be learning all the savory and sweet recipes for using this delicate and delicious food as well as eating all the food we make.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes to make different types of crepes such as an appetizer crepe, an entrée crepe & an sweet dessert crepe.  This class consists of some observation as well as hands-on techniques to learn how to form, cook and flip crepes. Perfect for a family group or a group of friends to enjoy an evening of cooking. ($40.00/per person, includes class instructions, all ingredients and supplies plus a full toppings and fillings bar, snacks & refreshments.  This will be a hands-on type of class.) *Kids are welcome  ** This class is now full.

 

SATURDAY, DECEMBER 28TH  - Tiramisu & Cantuccui Cookies  -   11am to 1pm  - 15 Students Max. *This class is now sold out. 

This class will cover the classic favorite Italian Dessert known as Tiramisu.  It uses layers of sweetened cream including mascarpone, which is an Italian type of whipped cream specifically for Tiramisu.  In this class all the ingredients for creating and layering an individual Tiramisu will be provided as well as an instruction on what makes the best types of cookies to layer with as well as types of soaking for the cookies.  *Please bring an Ceramic or glass square or rectangular dish that is about 9 inches by 9 inches and at least two inches deep.  This class will also teach you how to make minature biscotti called Cantuccui which italians use for after dinner dessert with Vin Santo or as a light morning snack.  ($40.00/per person, includes class instructions, ingredients, tools and equipment as well as printed recipes.  This class will also include a fresh Tiramisu to be taken home and chilled, please bring a glass square/rectangular baking sheet that can be refrigerated.) *THIS CLASS IS NOW FULL.

 

SUNDAY, DECEMBER 29TH – Winter Preserves, Candies & Jams.  - 1pm to 3pm – 15 Students Max.  

In this class learn about Salt & Sugar preserving.  We will be reviewing methods and types of traditional preserving as well as making an assortment of Citrus Preserves such as Candied Orange peel, Country Lemons (Preserved Lemons), and assorted Citrus Fruit Jams.  All supplies, groceries and canning jars will be provided as part of the class, but if you have some backyard citrus trees please bring as these are the best types of citrus to preserve; (Local variety’s have the best flavor and are the freshest for flavor).  Light snacks will be served with refreshments during class.  ($40.00/per person, includes class instruction, refreshments and snacks, all supplies, groceries and recipes to take home.)

Typically our classes are kept small to ensure an intimate experience for each of our students.  We provide beverages and bread with oil at most of our classes for our students to consume during class instruction.  Classes will close once the maximum number of students have signed up. *Gift Certificates good for one year from purchase date, afterwhich must be updated yearly before exp. date or they become voided/expired.
