SATURDAY, January 18th 2025 – CITRUS PRESERVING (Lemon Curd, Candied Citrus, Citrus Jam & Salted Citrus Preserves) – 11AM TO 2:00PM – 14 MAX. STUDENTS
**This class is pending on the availability of local citrus** – *Florida Citrus has undergone a large decrease over the last decade due to Citrus Greening. This means the availability of us getting local citrus has decreased and is not readily sold or obtained anymore in our state. For the preserving we do in this class we need local fruit, fresh picked and organic. For this reason we have made this class a pending class and if we can not get enough donations or if the citrus crop is not available we will cancel the class.
*WE ARE IN NEED OF ORGANIC LOCAL CITRUS FOR THIS CLASS – DONATE AND RECEIVE A $15 DISCOUNT.
Citrus Types Needed: Meyer Lemons, Tangerines, Honey Bell Oranges, Kumquats, and any Blood Orange or Red Grapefruit types.
Hands On Class – Vegetarian Friendly – Preserving
Enjoy an afternoon with the Chef and Owner of the Fat Tuscan learning about Salt & Sugar preserving. December & January are great months in which Florida has an abundance of wonderful citrus with many of our own trees hanging full and low with sweet tangy fruit. The class will go over methods on types of traditional preserving as well as making an assortment of Citrus Preserves such as candied orange peel, Country Lemons (Preserved Lemons), and Lemon Curd. Some citrus will be provided, but if you have your own citrus trees bring some to share with the class. Fresh local varieties always offer the best flavors with no pesticides. The class is $65 per person and will include light beverages, all supplies, utensils, canning jars, cooking class instruction, ingredients & printed recipes for students to take home.
*Reservation Pricing is only $15 to reserve a spot, as this class is dependent on getting local citrus. Should the class be cancelled a refund will be issued or the final balance will be due at the time of the class.
