Guest Chef Series – Guest Chef,  Fysh, Owner of the Local business Proud Pickles

Hands On Class – Vegetarian Friendly – Knife Skills – Preserving/Ferments

Join us for this special guest chef series class on Pickling and learn everything you ever wanted to know about processing, preserving and fermenting foods. In this class, Fysh Gurman owner of Proud Pickles, joins us to teach us all about preserving.  Proud Pickles, which is a local small vendor and a usual stall at our farmers markets selling unique and interesting specialty pickled products.  Fysh makes all his products from scratch and sources the most local and fresh produce from our area as possible.  He can be found most Mondays selling at our local farmers market located at Cypress and Grove here in downtown Gainesville which is held every Monday evening.  In this class, Fysh will teach basic knife skills for chopping and processing local vegetables for the fermenting process as well as leading several discussions on types of spices & flavorings used in preserving.  This class focuses on teaching the science behind the Fermentation process as well.  Each student will make and process a couple different types of foods including Pickles & Ferments which they will take home to enjoy later.  Tasting of all the types of pickles from Proud Pickles will be available as part of the class. Added to the class the chef will also talk about ways to use brines and fermented foods in everyday cooking such as soups, stir-frys and as condiments.  The class consists of some observation and some hands-on learning techniques for preserving. All ingredients will be provided by Fat Tuscan.  Aprons are recommended and note taking is encouraged. Each student will work at their own station and work with their own products for processing pickles.  $80.00 per person, includes light beverages & snacks as well as all supplies, ingredients, chef lead cooking instruction.  Students will go home with several pickled and fermented products to share later. *For the Knife Skill portion – Students may observe or work hands-on – please ask for a release waiver at the class which will be required for hands-on participation however.
